Mango-licious Tilapia

Loved this! Used cod and cooked in a skillet for 3-4 minutes on each side. I also marinated with the orange mixture while I made the scrumptious salsa. I added a little jicama for a little crunch. It would have been great rolled up in a corn tortilla. YUMMY!

Creamy Vanilla Ice Cream

Loved this! I used only 1 cup of 1/2 and 1/2 and the rest 1% organic milk. It was delicious. I also added fresh mashed peaches and the juice of one fresh lemon. I love what using a cooked custard does to the taste of homemade ice cream. Wonderful!

Cucumber Tomato Salad with Zucchini and Black Olives in Lemon Balsamic Vinaigrette

Loved this recipe. It was exactly what I was looking for. The lemon zest and juice added a wonderful fresh flavor. I did use less oil (1/4 cup) as that is my preference and it was still wonderful!

Spiced Mixed Nuts

Without a doubt, the best and easiest recipe for spiced nuts that I have tried. Cooled on parchment paper - easy for clean up. Made multiple batches in a short span of time. Loved it!

Crustless Cranberry Pie

Very easy and excellent flavor. I used sliced almonds and added the juice of 1/2 orange and about 1 TBSP orange zest. I used "Better N Eggs" for the 2 eggs and it was still wonderful! I'm getting ready to make it again to share with my work buddies.

Sausage Pasta

Very good - I added celery, red and jalapeno pepper (seeded) and used 2 small fresh tomatoes and fresh spinach instead of canned/frozen. I used shredded parmigiano reggiano cheese and chicken spinach sausage. Excellent flavors together!

Apple Cake I

Excellent! Like others, I halved the oil, but used butter instead. I also spiced it up a bit more with fresh ground nutmeg and a tad of cloves and added 1/2 cup chopped walnuts. YUMMY!

Vegetable Ham Stew

Very good! I sauted my onions, celery and chopped fresh garlic in 1 TBSP butter, used chicken broth instead of water and added butternut squash. Did not use green pepper, but did add whole wheat pasta to thicken instead of the cornstarch. Great hearty, healthy soup!

Tangy Turkey and Swiss Sandwiches

Delicious - I almost didn't try it when I saw the calories and fat content. I used less of the mayo mixture on the sandwich and sprayed the outside of the sandwich with "I Can't Believe It's Not Butter" spray. Can't wait to try the spread on another sandwich at a later time. YUM!

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

This is the best taco recipe I have ever used. Adding cornmeal was the frosting on the cake. My husband and I loved the flavor and how the mixture held together. This is definitely going in my "Recipe Box."

Sweet Potato Slaw

This is delicious! Sweet potatoes are so filled with wonderful nutrients. I love them in this slaw. I usually don't deviate when I make a recipe the first time, but I found I did not have any sour cream. I used Light 'N Fit Peach Yogurt instead. Yummy!!!

Strawberry-Mango Mesclun Salad

Absolutely delicious! I used EVOO instead of canola and cut it back to 1/2 cup to make it more healthy. I also used Splenda. It was excellent and a wonderful complement to our beef tenderloin and mushroom dinner. The colors are gorgeous on the plate!

Very good! Didn't have tomato sauce, used diced tomatoes with juice, cooked fresh mushrooms with onion and garlic instead of canned. Didn't have swiss on hand; used provolone and sharp cheddar -finely grated. Loved the cinnamon in this dish - reminded me of recipes made by my Arabic friends. YUM!!

Orange Buttermilk Salad

This is an excellent recipe. I use lowfat buttermilk to reduce the fat , omit the sugar and use sugarfree jello to cut the calories. I add 2 cans of drained mandarin oranges and occasionally change the flavor of the gelatin. My family loves it made with lime, lemon or pineapple also. YUMMY! No one suspects it is buttermilk giving it the rich texture and flavor.

Microwave Corn on the Cob

Even easier....is leaving the corn in its husk. The steam forms inside the husk. Remove from the microwave and leave in the husk for an additional 1-2 minutes. Remove husk carefully (using a clean hot pad works great). The silks hold together and come off so easily. This is about the only way I cook corn on the cob anymore.
