Restaurant-Style Potato Salad

Quadrupled for a crowd of 30 and there wasn't any left! Made the potatoes the night before by cooking whole (skins on) in a big pot then draining and refrigerating overnight. Chopped up in the morning. Mixed all other ingredients then folded in the potatoes. Omitted pimento and added a smidge more carrots for color and texture. Thanks for sharing!

Sweet Restaurant Slaw

Quadrupled this for a crowd of 30 and there was none left! For my tastes, this is absolutely perfect when cutting the onions and sugar by half. I also subbed Hellmann's Light Mayo because it's what I had on hand. Mixed up the wet ingredients the night before to let the flavors meld and tossed with the coleslaw mix about 3 hours before serving. Thanks for a crowd pleaser!

Slow Cooker Texas Pulled Pork

Outstanding recipe! I used this for a crowd of 40 and everyone raved over the meat. I cooked an 8.5lb, a 7.5lb and a 7lb and just doubled the ingredients for each. Cook time about 9 hours at 200 in my cast iron Le Creuset pots. I only added back about half the juices after straining out some fat. Served in a Kitchenaid 6QT Slow Cooker using my Presto griddle to toast buns.

Baking Nana's Disappearing Focaccia

Delicious bread! Light, chewy and exploding with flavor without overpowering the main dish. This is a wonderful company bread because you can make it ahead of time and reheat right before serving. My husband loves to toast his up and eat by itself.

Flavorful Chicken Rolls

Lovely company dish! Sure, it takes some prep but that's what excellent meals require. Fine balance of flavor and beautiful presentation. This is a recipe that will make you look like a gourmet chef and is sure to impress any dinner guests. My notes: I trimmed my chicken breasts after flattening for super clean edges, make sure to pound them very thin or the roll becomes too bulky and hard to handle. Didn't need toothpicks, just put them seam side down in the Pyrex dish. I used 4oz cream cheese, 6oz feta (that was the container size) and 4oz Philadelphia lemon/herb Cooking Creme (had it on hand and it blended very nicely). Also used 6 large breasts. I saved some time with 2T prepared fresh basil (out of the tubes they sell at the grocery store. I know this is SO lazy, don't judge me.) Took the advice of other reviewers and spread the cheese blend on the chicken first, then added spinach leaves (go fresh, PLEASE!) and topped with applewood smoked ham slices. I used 2 eggs & no milk to dip and seasoned panko bread crumbs for my topping. Cook time was 40 min at 375 and I used my electric knife to make perfect medallion slices for serving. Sides were fresh corn on the cob and green beans out of the can. I also flash-froze two breasts after rolling in panko crumbs and sealed up in ziploc for a future quick dinner for 2. Happy Eating!

Mexican Bean Salad

Awesome! I halved the recipe and just used a can of cannellini beans, a can of black beans and a can of corn along with half of the other ingredients. This has great flavor and tasted even better the next day. Great company dish as the colors make it extremely appealing. Served with Mean Chef's Chicken in Red Chili Sauce & Rice.

Fettuccini with Mushroom, Ham and Rose Sauce

Delicious! I subbed evaporated milk for cream and thickened with 1/2c mozzarella cheese. I also diced the mushrooms and added 1/4c of green pepper since I had it on hand. Great balance of flavors with a dash of heat. Loved it!
