Golden Potato Soup

Easy, good-tasting, and not loaded with processed food. This recipe has it all! I gave it a quick stir with my immersion blender and garnished with some crumbled bacon. Love!

Oatmeal Craisin Cookies

Crisp and chewy texture. I made these exactly as the recipe was written, no changes (what a concept, right?) This is midway between a straight-up flour cookie dough and a full-on, heavy oatmeal cookie. Thank you Liane!

Mexican Bean Salad

Tasted even better the next day, despite skipping the lemon and lime juice (did not have on hand) . The Mexican flavors gave it more interest than similar recipes I have tried .

Quick and Easy Sauteed Spinach

It is not that much more work to use fresh sliced garlic, so that's what I did. I used three cloves and let it cook in the oil before adding the spinach. When the garlic pieces started to sizzle, I added the spinach leaves and salt.

Hot Pockets no more! Great for hungry 12 year old son after school, and healthier than packaged convenience foods. Tip - do not skip draining the fat from the browned meat - it keeps the bread from being soggy after baking.

Hershey's MINI kisses are a good option - they are not wrapped and are smaller so you have more pretzel taste. I followed the 3 minutes at 250 degrees and that worked great for the minis - so fun! Used red/green M&Ms for Christmas!

Chef John's Sweet Potato Casserole

The topping is genius - so good. Husband is allergic to pecans so works out well for us. The potato mixture is not overly sweet, very tasty but could use more butter to make it a little richer tasting. I will save this for sure.

Catherine's Spicy Chicken Soup

Great option to make instead of your standard ground beef chili or traditional chicken chili. This is a versatile recipe. I didn't have any canned tomatoes or tomato soup, so I used low-sodium V8 and added some extra corn and beans to make up for the texture. It turned out very tasty. The shredded chicken gives the soup a great consistency. I would consider it a Southwest type of flavor.

Pumpkin Gingerbread

Oh yeah! This is the pumpkin bread/muffin recipe I have been looking for. I made muffins, baked for 20-25 minutes. The kids devoured them. Sorry, but this one is just better than the Downeast Maine recipe - it has more flavor.

Seven Layer Taco Dip

The best seven layer dip! The lettuce gives it a great crunch. Be sure to dry of the lettuce well and choose a salsa that is not watery. It makes a lot of dip, I used a 9 x 13 inch glass dish and it filled it. I skipped the tomatoes and used red bell peppers instead.
