Easy Chicken Parmesan

My husband and my dad thought this was great! I think that it did need more seasoning, like alot more... I followed someone else's suggestion to cover with foil until the last ten minutes, and it came out just perfectly browned and bubbling.

Southern Fried Chicken

Excellent recipe! Instead of just salt and pepper I added Creole seasoning and extra paparika. The other reviews on here were also very helpful! Especially the one about putting the chicken in ice water and salt to get rid of the veins, it really worked, wow! That is a hint I will use for the rest of my life! I also followed other reviewers and let the chicken sit for a few minutes after dredging it in flour and then put it in the flour again right before frying. If you like a thick fried breading, this is the way to do it! Also, to make sure my oil was at 365, because I have a gas stove and no thermometer, I heated up my pan of oil in the oven at 365 and then put it on the stove with a medium flame. I didn't have any flour coming off the chicken as it went into the oil. I waited about 8 minutes before turning the chicken, and then after another 8 minutes I turned it again, so I did turn the chicken a couple of times, but it came out fine. I was just worried about burning it, but it came out GREAT!

Sausage and Zucchini Lasagna

Sweet And Sour Glazed Chicken

The meal is a success in our house if we can get the kids to eat it, and they did! I will be making this again! After reading some of the reviews, I only used 1 package of the onion soup mix, and added pineapple preserves and crushed red pepper too. Maybe would have been even better with more pineapple in it! Also, I boiled the chicken so it wouldn't dry out and then oven cooked it for the last 20 minutes.

One Pot Pinto Beans

Great recipe! My only change was to throw a few slices of uncooked bacon in to cook with the beans. Don't leave out the red pepper, it really adds to it.

Cherry Cobbler II

Made this for dessert on fathers day and it was very yummy! I reduced the butter, but I think next time I may use the amount stated in the recipe. I was able to tilt the pan and spread the melted puddled butter around the top once it was out of the oven and had cooled. So good!

Jim's Cheddar Onion Soda Bread

We loved this bread! I chopped the onions really really small so the kids wouldn't notice them and added a little extra cheese. I also had to add almost a cup more of buttermilk. So delicious and so perfect with our corned beef!

Jam Muffins

We enjoyed these muffins. Because I have small children and I didn't feel like having a jam mess, I mixed the jam into the muffin batter right before putting in the muffin tin. You could taste it throughout the muffin, yum! Next time I will add 4 tbs of jam. I also subbed applesauce for the oil, because I was out of oil. I would have given these muffins 4 stars, but my picky kids enjoyed them so much that it deserves a 5!

This was AWESOME! I made it just as directed using apricot pinapple preserves. First made the tortilla chips kind of big, but per someone elses suggestion I finished off making them small and they were better that way, kind of bite size.
