Homemade Black Bean Veggie Burgers
These were amazing. So flavorful and delicious. I cannot wait to make these again. I made my homemade (amazing) guac to top, and dipped every bite in my "special sauce" (half fat free ranch and half buffalo wing sauce). I am craving them now.

Catherine's Spicy Chicken Soup
One of the most delicious soups I've ever tasted. I made a few changes. I made a half recipe and that was enough for ten people-plus seconds. if you make the whole batch it would feed an army. So this is what i did: I used chicken broth instead of water, and i did not add the salt that the recipe calls for because the broth adds enough flavor. i used HOT chuncky salsa (is supposed to be spicy!). I didn't bother putting in the can of whole tomoatoes (it would be a bit hard to eat) so i did the one can of diced tomatoes, plus another can of diced tomatoes in substitute of the whole tomatoes. instead of only using half the can of corn, i used the whole thing-why not! bring it to a boil for about 5 minutes then let simmer for 30. this soup is fantastic!!!
