Baked Apricot Chicken

Very yummy! The ingredients seemed to be a strange combination but we loved the end result. Juicy and flavorful. The only reason I gave a four instead of a five was that the onion soup mix gave it a little of a 'packaged' taste. But, the convenience of using packaged ingredients is worth it.

Baked Chicken with Peaches

I've made this twice and it turned out great both times. I used a large can of peach halves instead of fresh because they were not in season. I shared this recipe with a friend and she loved it too. Easy, looks good and tastes delicious!!! This is a yummy meal for any night but I wouldn't hesitate to prepare this for a special occasion as well.

BBQ NY Strip

Wow - this was delicious!! I made the recipe exactly as described and marinated a sirloin steak for most of the day. I do not normally eat steak and made this for my husband but I have to say , when I tried a small piece, I loved it! Definitely a keeper which I will use again.

Easy Curry Couscous

Very easy to put together and so yummy. I did not add the 2 teaspoons of salt and didn't feel it was missed at all. I used dried cranberries because we were out of raisins and that worked fine but next time I will use raisins. I think their flavor would compliment the seasonings better. I stirred in some shredded chicken to make it a bit more hearty. This is definitely a keeper and provides opportunity for a cook's creativity.

Mound Bars

Delicious!! And so easy...I made these with a couple of the suggested shortcuts: after baking the graham cracker base I sprinkled the coconut on and then poured the condensed milk over the top and baked - that worked just fine; then I sprinkled the chocolate chips over the coconut layer and baked for an additional 2 minutes. The chips were softened enough to spread easily. We like these better than the traditional 7 layer bars.

Chococonut Chip Cookies

I was looking for something a little bit different than the usual chocolate chip cookies. These fit the bill and they are scrumptious! The only change I made was to use 2 1/2 cups of coconut instead of 2. They have a nice chewiness to them. I also had to bake several minutes longer than called for. Maybe I made extra large mounds of dough but I just kept checking on them and took them out of the oven when they had browned up - maybe an extra 4 minutes or so.

Slow Cooker Turkey Breast

I made this exactly as written and it was delicious! The turkey turned out very moist and tender. There was an inch or two of liquid in the crockpot that I thickened with cornstarch - it made wonderful gravy. I used Lipton Recipe Secrets Onion Soup mix. This is a recipe I will definitely make again - even for Thanksgiving! I figure I can bake drumsticks/thighs separately for those that prefer the dark meat.

Brooke's Best Bombshell Brownies

Absolutely delicious! Very rich, sweet and chocolately. I've made a recipe very similar to this for years. A couple of things that might alleviate a few of the complaints: When beating the melted butter, sugar and vanilla, beat at high speed until it turns a very pale yellow (5 minutes). This will allow the sugar to completely dissolve and give it volume. Add eggs as instructed and then stir in the cocoa powder and flour at a very low speed or by hand. Do not overbake as that will cause the dryness. They will look rather undone while still hot but will firm up nicely as they cool. They are sweet and fudgy....so if you like less sweet, more cakelike brownie these are not for you.

Boyfriend Brownies

Oh how I wish I'd read the reviews before making these! I used a 9X9 pan and it overflowed as it baked.....the sides were done but the center was gooey and undercooked. The outer edges were delicious and I'll try these again - but in a 13X9 pan. Too bad - alot of ingredients went to waste when I made as directed.

Chocolate Chip Coffee Cake

Absolutely delicious. The first time I made this the middle fell as it cooled - was undercooked and gooey. ( I'd checked for doneness but maybe more to the sides than the center.) I ended up throwing it out and went out to get the ingredients to try again.....it had smelled so good baking I knew it would taste great. I checked my oven temp. and it was right on the money. Second attempt turned out fine - the cake is dense so I think you need to watch carefully to bake until done but not overdone. I used a 9 inch springform pan. Served for Easter brunch to rave reviews.

Brown Rice and Black Bean Casserole

This seems to have a starnge combination of ingredients and I was worried it might be too dry.....but.....it was great. I followed the recipe exactly and it was delicious! Very different, very tasty.
