Annie's Fruit Salsa and Cinnamon Chips

This is great as a dessert, appetizer, or snack. I have made this several times and I really appreciate the versatility of the recipe. You can substitute or increase certain types of fruit to suit your taste preferences, what is in season, your budget - we've made it with just about every fruit you can imagine. My family likes this when it in't as sweet, so we also cut down on the sugar. Other reviewers have mentioned this - but anytime you add sugar to fruit it will draw out the moisture and make the fruit (especially strawberries) soft. So, if you make it and it seems too firm for your liking, give it an hour in the fridge and the consistency will be different.

Slow Cooker Pumpkin Turkey Chili

I looked at several other pumpkin chili recipes and the ones that got 700 reviews. Every positive review had so many changes and this recipe seemed to reflect them. I made this Halloween night and it was sooo delicious. We followed the recipe as it was listed except for these changes: canned tomatoes with diced chiles, unseasoned black beans (all I had in the pantry), and no brown sugar (I just forgot). I had some extra canned pumpkin puree (about a cup) that I threw in (why not?) and an extra can of beans to stretch the recipe further. It was really delicious. The flavor was subtle, it was so hearty and good. We ate it with honey cornbread and sour cream. Utter perfection. We will be adding this to our chili rotation!

Slow Cooker Mashed Potatoes

These turned out really well. I was afraid that five pounds of potatoes would not fit in my slow cooker but I would advise everyone to do all 5 lbs. ALl of the ingredients fit easily into my crockpot, which is really small. Potatoes are always good, but when people tried these, eyebrows went up and everyone remarked on how creamy and delicious they were. I'll fully admit to "taste testing" these about 6 times - not to adjust seasonings but because they were so good! Great flexibility to the dish with the crockpot, too. I made this the night before for a potluck and just cooked it the next day. Easy and so good!

Easy French Dip Sandwiches

Good, easy recipe! We sautéed some bell pepper and onion slices in a bit of olive oil and worcestershire sauce to go on the sandwiches. It made them even better and bulked the sandwiches up. Like a lot of other people, I added some onion powder to the consommé.

Braised Balsamic Chicken

We made this tonight. My husband and I thought it was good and I appreciate the fact that it is healthy, cheap, and easy to make. I tend to always have these ingredients in the pantry or can substitute something else. Tonight, we subbed some fresh chopped tomatoes for the canned. We served it over pasta because it was strong but I really think it would be awesome over some cornbread...

Pumpkin Chocolate Chip Cookies III

These are great. I made some substitutions to make them even healthier and they are still delicious. I did half brown sugar and half white sugar as well as half whole wheat and half all-purpose flour. I was out of milk so I did fat-free half and half. I also only used half the oil and did applesauce for the rest. I used a melon scoop so it did little balls of moist dough. I baked for 11 minutes and they are perfection - cooked all the way through yet the chocolate is gooey. My toddler even loves these!
