Chocolate Chip Mini Muffins

This recipe is missing something... I don't want toothachingly sweet muffins, and these definitely are not. However, these taste almost bitter. My kids ate them, but they requested that I make my blueberry muffins next time. Hard to believe they'd rather eat berries instead of chocolate.

Nana's Beef Stroganoff

I cheated and used ground beef because I was hungry and didn't want to wait 3 hours. It still turned out well. My entire family cleaned their plates, and that includes my extra special picky eater.

Blueberry Muffins II

The basic recipe is okay. It does produce moist muffins. I had to tweak a few things for my family though. 1. There was way too much sugar for us. Especially when adding another 1/4 cup of sugar to the tops, the muffins came out tooth-achingly sweet. 2. I used 1 1/2 cups of blueberries instead of 2 1/2. The muffins still had plenty of berries. I think with the extra cup, there would have been more berries than muffins. 3. The recipe says to bake for 30 minutes. My first batch smelled done at 20 minutes. I went to check on them at 25 min and they were well on their way to burning. Perhaps I live at a higher elevation. Perhaps it depends on the type and size of muffin pan. I don't know. For reference, I used a 12 cup silicon pan. Someone complained that their muffins stuck to the pan and fell apart. I did not have that problem at all. Perhaps that individual did not know how to properly grease their pan. I just used a non-stick coconut spray on mine. If I had used a metal pan, I would have used shortening and then dusted the pan with flour.

Mama's Asian Chicken and Rice

Loved it! Even my picky eater ate his fill. I took the other reviewers' suggestion and doubled the sauce. I didn't have the Chinese five spice powder, but that's okay as we don't care for overly spicy foods anyway. I actually cut the red pepper by half, even as I doubled the other ingredients. I substituted ginger for the five spice powder. It came out just right - tangy and sweet with a hint of spiciness. I also did not bother with the cornstarch. As others have noted, the sauce thickens up nicely on it's own after simmering for 30 min.
