This is a fantastic addition to any meal. The first time I tried this recipe, it took quite a while to bake because the squash takes longer to bake through, so everything else mildly suffered by being a bit over-cooked and vary dark (but still tasty!) The second time around, we had friends coming over, on of them being a very good cook, so I was really trying to impress them. I changed the recipe a bit thoug. I used more EVOO so that the pieces could be coated more and replaced some of the ingredients. I took out the squash and instead added brussel sprouts, left some of the onion separated with more layers and whole garlic cloves (still wrapped in it's skin). I also lowered the temparature of the oven to avoid burning of the onion and covered it with foil for the first 20 minutes or so. It turned out DELICIOUS. Everyone loved it, and garlic becomes a whole different beast when eaten whole once it's been baked~ just melts in your mouth! I will definitely be making more of this to add some sort of healthiness to any of our meals.
