Arjun's Lime Chicken Rice
This recipe was wonderful. However, I made one main change. My husband is not a rice lover, so I substituted orzo pasta. For those of you who have the same situation, or for a nice change of pace, here's how: Just use 1 cup uncooked orzo and one can of chicken broth. No more liquid needed, and keep the rest of the recipe the same, cooking for approx. 15-20 minutes until liquid is absorbed. The previous reviewer didn't know what to serve it with but I think any chicken recipe would do. I made Easy Honey Mustard Chicken w/ Mozzarella and the flavors melded perfectly. Since I was making chicken, I ignored the chicken part of this recipe, making it much less time consuming. This was a winner!

Chicken Vesuvio
This is my first review and the only reason I'm doing so now is because this recipe was not rated and I want more people to try it. I had not heard of this before, and when I told my husband I was making this dish with the funny sounding name, his eyes lit up and said he'd always wanted to try it, has several recipes of his own, but hasn't made it. Needless to say it was a hit. The flavors blended perfectly and was a snap to put together. The only change I made was to saute the mushrooms in some butter before adding to chicken. Served with Sesame Asparagus from this site, and my husband said it was restaurant quality. Evidently, Harry Carey's restaurant in Chicago is known for this recipe. Pls try it.

Eighth Race Pie
I made this pie for a Kentucky Derby party this last Saturday. While it was very easy and looked great when I put it in the oven, it refused to set. I baked it 45 min. on bottom rack as per recipe, but it was like water when I took it out. I've never made a pie like this so I'm hoping someone who gave this 5 stars will review it and tell me what I did wrong. Needless to say I was very embarrassed when I cut into a beautifully done pie (or so it appeared) only to have it liquid in the middle. Help please!
