Personally I really the caraway seeds - they give it a wonderful, vibrant flavor! I made this twice - once with bacon (yum! If I make it again I would add more bacon!) and once with just onions for a vegetarian guest. Both times I got complements (one of the times we had three bakery bought quiches, but everyone agreed they liked this better :)
Both times I had leftovers. I didn't feel like it kept terribly well. If you have leftovers try to eat them in the next 24-hours.
Best served hot from the oven.
