Chicken Salad Balsamic

Reviewed: Aug. 25, 2008
I took others suggestions and used less olive oil. I used about 1/2 what the recipe called for. I though the recipe was really good after that. I think the key is to use an aged balsamic so that the there is a more mellow taste. I actually used an aged pomegranate balsamic vinegar. When I tried this recipe for a sandwich pieces kept falling out so I blended it in a food processor with just a couple of tablespoons of cream cheese. Oh my gosh, sooo much better!!!!

Mexican Baked Fish

Pretty good. Used Salsa verde & mahi mahi. I don't think I will put the chips on next time though. I didn't think it needed it. Also, didn't use the sour cream or avocado (didn't have any & I don't think that it really needed it).

Beef Caldo with Spinach

Reviewed: Jan. 28, 2008
This was pretty good. Had to add more seasoning (soy sauce, salt)and topped it off with a little lemon juice and hot sauce just before serving. I think next time I'll add more garlic & spinich. I wasn't sure what to use for the tomato puree but used a can of tomato paste and added water to make two cups.

Easy Lemon Cookies

Reviewed: Mar. 24, 2005
This recipe is wonderful and easy. I made them last night and they were gone with in 48 hours. Everyone loved them. I made them exactly as directed but I think I will try adding some lemon zest and a little lemon juice just to give it a little more punch (although they are great as they are).

Chimichurri Sauce

Reviewed: Mar. 7, 2005
This is great! My family fell in love with the Chimichurri dip that the Gaucho Grill serves with their bread and we were looking to duplicate the recipe. I have to say this one is even better and more flavorful. I can't wait to try it as a marinade.
