Broccoli and Rice Stir Fry

Delicious Black Bean Burritos

My boyfriend and I love this recipe! I changed it a little. I boiled and shredded some chiken and added it in at the last minute. It was excellent. I also bought a box of Uncle Ben's Mexican style rice and added some of that into the burrito also. Needless to say it was gone in no time.

Garlic Red Potatoes

This recipe was excellent! I made it with T-bone steaks and green beans. My boyfriend loved the potatoes so much that he didn't even want to eat his steak.. which is amazing because he loves steak! The only change I made to the recipe was that I doubled the garlic sauce. It was great and it will definitely be a family favorite....2nd review.....we have been making this recipe for over 5 years now and it's still a hit!! My boyfriend (now husband) absoluetly loves it. I gave this recipe to my sister as well and it's a hit in her family too. fantastic!

Mexican Chicken Corn Chowder

This was awesome!!! I used chicken broth instead of the hot water and chicken boullion cube as suggested. I also used diced tomatoes with green chilies and I put in some chopped up canned potatoes. I added a little more hot sauce then suggested. I served it with tostada chips and lots of cilantro. My boyfriend is from mexico and he loved it, he said it was excellent and ate atleast 3 bowls for dinner and had some for breakfast the next morning. This is definitely a keeper. The only thing I would add to it next time is some more hot sauce and and maybe some more chilies.

Aunt Jewel's Chicken Dressing Casserole

I made this for my sister and fiance. They both loved it! I added cauliflower, broccoli and carrots to the soup/milk sauce and also added about a spoon-full of sour cream and a few diced jalapeno peppers. It came out great and I got rave reviews from everyone. I served it with salsa and black beans...it was a hit.

Chicken Parmigiana

Everyone loved this recipe! I didn't really change anything about the recipe. I covered the chicken after putting the cheese on so that it would not burn as suggested. I would suggest using more sauce, my boyfriend seemed surprised that there was not alot of sauce. Also make sure that you use a good quality sauce, it really does make a difference.

Chicken With Mushrooms

This recipe was very good. The only thing that I have changed with this recipe is that I used canned sliced muchrooms and I used Spicy Monteray Jack with Jalapeno's cheese. I didn't put the cheese on right away either, I let it cook for 15 minutes, then add the cheese and let it cook for another 15. This way the cheese does not get hard or burnt. Excellent recipe..thanks!

Oh-So-Good Chicken

This recipe was great...it will be a new family favorite. It is very easy to make. I made some changes to the recipe...I added black beans and some hot sauce to the mixture and also sprinkled some cheese on top 5 minutes before taking it out of the oven. I didn't use all of the rice called for in the recipe, maybe only a cup and a half instead of two and I thought that it could use just a little more salsa and maybe some diced tomatoes. It was very very good. I served it with sour cream and tostadas. Excellent!!!

Chicken Pot Pie Soup

This was okay...not as good as I thought it would be, but it was pretty good. Nobody from my family complained but they didn't rave either. It is kind of bland tasting. I served it with some buttermilk biscuits on the side, which was a nice compliment. I might make this again and try to make it less bland.

Jambalaya With Shrimp

This recipe was pretty good. I took the advice of other reviewers and added 1/2 cup extra chicken broth and also added some diced chicken and a can of sliced mushrooms. I thought that it was a little bland and am hoping to put some more flavor in it next time I make it. The overall rating was definitely good.

Apple Pie by Grandma Ople

I got great reveiws on this recipe. I didn't change much about it, only a few things. I did add nutmeg, cinnamon and some vanilla to the apples as suggested by others. I found that I had to cover the pie after about 10 minutes of it being in the oven because the latice crust-work was burning due to the sugary syrup I had poured over it. Thankfully I caught it before it burned too much and covered it with aluminum foil. Besides that it came out great. Thanks for the recipe, this will be my new apple pie recipe.

Coconut Custard Pie III

The first time I baked this it didn't come out terrific but I decided to try it again and I made my own adjustments. The first time it tasted very eggy so I used 3 eggs this time. I also used 1 1/2 cups milk and 1/2 cup half and half, omitting 1/2 cup. It seemed that there was too much filling the first time I made it also. I also used only 1/2 cup of sugar instead of 3/4 cup. I added a little bit of cinnamon as well as the nutmeg. It came out great this time. My brother-in-law loves this pie.

Scallop Scampi

This is by far the best recipe I have ever gotten off this site and believe-you-me I have gotten alot! I did make some changes to the recipe per the reviews of other users. I used a half butter, half olive oil combo instead of margarine...I used scallions instead of the onions....I added shrimp, mushrooms and about 1 1/2 cups of shredded swiss cheese....I used parmesan cheese instead of romano and I only added a little parm during the cooking and added most of it right before serving while I was adding the swiss cheese. This came out delish, it was like being at the olive garden. The only thing that I will change next time is to double the sauce because with the added shrimp and mushrooms the sauce didn't seem too plentiful. I got rave reviews from my bro-in-law and sis and their only complaint was that they wanted more sauce. I served this with garlic bread and the remainder of white wine. Great! One more tip...add the cheese when it is warm, not boiling. So basically take it off the stove and let it set for maybe 5 minutes before adding the cheese. I figured this out the hard way. If you add the cheese when it's too hot it will clump up and stick to everything. The sauce doesn't get creamy that way. Only if you add it when it's warm.

Creamy Caramel Flan

This flan was pretty good. It was very thick as most reviews said, but still good. I think I will take the advice of others and half the amount of cheam cheese. My brother-in-law, who is from mexico said that it was great. He said that it doesn't taste like flan from mexico, it's different but better. He loved it!

Spanish Flan

Perfect flan!! I also made the Creamy Caramel Flan but that was way too thick for me. It was more like cheese cake then flan. This was more light and fluffy and exactly what I was looking for. Next time I will try to use low fat evaporated milk or low fat sweetened condensed milk and see if that takes anything away from it. It was great...very highly recommended if you want something similar to true mexican flan.

Easy Slow Cooker Meatballs

This was pretty good. I made it for my husband and he said it was delicious. He did say that the sauce was not that good. I noticed there was a lot of oil in it from the meat so this may be the reason. I baked my meatballs for about 25 minutes beforehand. I also put pieces of hard boiled egg and cheese in the center of the meatballs. This is something my husbands mother does in mexico. The cheese actually melted out but the egg was fine. I also added some turkey keilbasa in there and that was wonderful. It melted in your mouth. Would probably make again but need to find a better sauce.

Lentil Soup

My family and I love this soup. I make it several times a month. It is super tasty and super healthy. I add a few more things to it though. I always add green pepper, chopped butternut squash, quartered new potatoes and sometimes turkey kielbasa. Mostly I leave it veggie, I found that the kielbasa makes it a lot more greasy and prefer it more healthy. I have also used Organic French Green Lentils and it is wonderful. Highly recommended. My husband loves it!

Baked Honey Mustard Chicken

This was fantastic. The chicken came out so juicey and almost melts in your mouth. I love the sauce it was tangy and sweet, just perfect. I did change a few things. I used dijon mustard and organic honey, I didn't use basil. This was what I did. I sprinkled salt, pepper and garlic powder on both sides of the chicken, then poured half sauce over chicken and baked for 20 minutes. I then turned the chicken over and poured the remaining sauce over the chicken. I baked it for another 15 minutes. Fabulous, this is going to be a staple in my house. My husband loved it too. I served it with sauted spinach and garlic and conscious and lentils. This is a must try recipe.

Beth's Spicy Oatmeal Raisin Cookies

Fantastic!! I love these cookies. This is the recipe I have been waiting for. I changed it just a little bit according to other reviewers suggestions. I used 1 cup butter and omitted the butter shortening. I melted the butter halfway. I did decide to use the cloves and added some nutmeg as well. I also used golden raisins the first time and big juicy organic raisins the second time...wonderful! My husband loves them and by the end of the night almost half were gone. These make about 50 cookies. Our favorite cookies are oatmeal raisin so I think this will be a weekly thing.

Chicken Hurry

This recipe was very good and reminded me of a recipe my mom used to make. I changed this recipe a little. I used chicken legs instead of thighs. I doubled the sauce but kept the original amount of brown sugar and only used half the package of onion soup mix. I also layered the bottom of the pan with sliced onions. There was only enough sauce to put about a large spoonful over each piece of chicken. I want enough sauce to pour it over and cover the chicken as well as an inch or so in the bottom of the pan. So after spooning the sauce I added water to the bottom of the pan, atleast enough to cover the onions. It came out really good. My husband liked it but said it was a little too sweet so next time I think I will omit the brown sugar all together. I also seasoned the chicken with pepper and garlic powder before putting sauce on it. This was very easy so I will make it again.
