I love cooking and finding different and interesting recipes. I must have 20 cookbooks on top of the 2 or 3 I have compiled myself. My biggest fan is my husband, who is also my biggest taste-tester. I also love to read, go kayaking or water rafting, knitting...I love watching movies and I love spending time with God. I am a gemini so I am a jack of all trades and a master of none...
My favorite things to cook
I love to cook mexican food since my husband is mexican. I try to get close to what his family cooks but I don't think I am close yet. I mostly cook with chicken. I also love to experiment with baking and go through phases where I bake cookies, pies, cakes and anything else I come across. I also love to cook pasta and italian foods.
My favorite family cooking traditions
Favorite family cooking traditions...hmmm...my dad's huge meatballs. Those are legendary and the best. He also makes great hot-wings and yummy lasagna. My grandmothers chicken and veggies has been pasted down 3 generations as far as I know and is one of the fav's of the family. Also her pork-butts are the best.
My cooking triumphs
Making flan...I finally got my mother-in-laws recipe and although I have not perfected it I am coming pretty close. Also just cooking in general...I could only cook mac-n-cheese when my husband and I moved in together...I have come a long way and have found that I have a knack for it. Not surprising though as great cooks run in the family.

No-Noodle Zucchini Lasagna
Tried this for the first time tonight. It came out pretty good. I left the wine out as well as the water and mushrooms. I think I will add garlic next time to the meet mixture. I didn't use fresh herb and just used the dried ones in my cabinet. I also used low fat cottage cheese instead of ricotta. This was only because I couldn't get low fat ricotta or organic which I also try to get if possible. One note though: I made a small pan of it and halved all the ingredients. There wasn't enough to complete all the layers. Next time I will use the full amount even for a smaller pan. I would also double the cottage cheese/ricotta as I used the full 16 oz in the half recipe and still didn't have enough to complete both layers. If you love cheese then you will also use the full 16 oz for the half recipe as well. Very glad I found this recipe. Thanks!!!!

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever
I made this cupcake for a good friend's birthday party. These were absolutely amazing. I made my cupcakes with 1/3 brownie on the bottom and Strawberry cake on top with a cream cheese icing. I cooked my cupcakes for 25 mins at 350 degrees. Please note that the brownie is going to be soft and gooey. I love it like that and so did everyone else but anyone that is squimish about brownie batter that isn't fully cooked might want to cook just the brownie in the oven for a bit before adding the cake batter. I also tried putting only a little brownie on the bottom instead of 1/3. I found that the brownie still stayed gooey and when unwrapping these cupcakes the brownie stuck to the foil cups. All the cupcakes that had 1/3 of the brownie came out of the foil cups without a problem. I will definitely make these again and have been deemed the "cupcake maker" of the family now.

Spaghetti Squash Saute
MADE THIS FOR THE FIRST TIME AND IT CAME OUT REALLY WELL. MY BF IS DIABETIC SO WE MADE MEATBALLS AND SAUCE AND SERVED THEM OVER THE SPAGHETTI SQUASH. WE BOTH LIKED IT AND IT IS A GREAT ALT TO PASTA FOR HIM.
