Unbelievable Chicken

Loved it. Making it again tonight. Gives great flavor to boring chicken breasts. Didn't have a lime, so I used a whole lemon instead. It was bit better with the lime on the first try, but good with only lemon as well.

Megan's Granola

It smelled good whole cooking and I will try it again, but one hour was too long and it was too dark. Next time I will try 275 degrees and maybe 45 minutes. I would also increase the ratio of liquid to dry as it was a bit too dry. I cooked it on a silpat on a good quality heavy gauge cookie tray. I also think it needs a bit more flavor, maybe a bit more cinnamon.

Chicken with Lemon-Caper Sauce

The recipe was just yummy. The only change I made was to place the browned chicken in a pie plate in a 325 degree oven while I made the sauce and cooked the pasta for about 12 minutes. I was concerned the chicken would not be cooked through. I think this actually improved the chicken as the crust got nice and dry and the oil evaporated. I served it with thin spaghetti in a light butter sauce and the juxtaposition of the lemony chicken with the simple pasta was just perfect. Sprinkled it with parsley before servimg and it looked festive. Also, by putting the chicken in a baking dish, I didn't drown it in the sauce. Several people said it was too lemony, I just spooned a tablespoon of sauce over each breast just before serving and it was perfect. I think if it sat in the sauce it would be too tart and the crispy crust on the chicken would have gotten slimy.

The Best Lemon Bars

This was s disappointment. I followed the recipe exactly, except I added the zest of the lemons to the crust and since my lemons were small I used three instead of two. A measurement of juice would have been preferable, mine came out to be about 1/4 cup. I used a food processor to make the crust and my butter was not very soft, but since I was using a food processor, I thought chilled butter would work better. The pan was a non-stick heavy gauge 9x13 pan. In general, the crust came out well, but a bit thick and too buttery, but the topping was waaaay too sweet and not enough lemon flavor. It was a bit gummy too, not the light creamy lemony flavor I was desiring. I did top it with powdered sugar for a nice looking finish. I will be looking for a different recipe or adjusting this one. Did I mention that there was too much sugar and not enough lemon flavor!!!!

This was a bit dry and the crust was a bit too crunchy. It needs more moisture. It has good flavor, but needs some tweaking to make it more moist.

I think this is a good foolproof recipe. The small size is perfect of a day or two. It has a chewy consistency which is great with butter and a drizzle of honey.

Sour Cream Coffee Cake II

I think the instructions were poorly written. For instance eggs: medium, large, extra large? It makes a difference. Flour: sifted or not. Prepared pan: grease and flour or just grease. When writing a recipe, I think you need to be specific so everyone gets the same results. The organization of the recipe was poor too. I think preparing the topping first would be a good idea, and then a description of the texture of the batter would be good too. I was surprised at how thick the batter was and was wondering if I did something wrong. The cake is in the oven now, and I hope it comes out right, but I will be re- writing it if I decide to use it again.

Ooey-Gooey Cinnamon Buns

These are pretty good, however they turned out a bit too well done following the recipe exactly. I will try this again, however, next time I will either drop the temperature or cover after 20 minutes. I drizzled on a vanilla glaze for some extra color.
