Acorn Squash Soup

Very Good. Used 1 large acorn squash. Used immersion tool to blend. Very simple, delicious soup. Also used the fat free evap milk. Thanks for a great recipe.

Homemade Black Bean Veggie Burgers

I was very skeptical in making these. I did cut back on the spices. Only used 1 t of cumin and chili powder and it was plenty. Made 6, we like a thinner burger but on a roll, with lettuce, tomato and onion....couldn't tell much of a difference. Nice low calorie option.

White Chocolate Raspberry Cheesecake

Excellent recipe! I purchased the ready-made oreo pie crust and add 1T sugar and 2 T melted butter, crushed and reformed in my springform pan. Worked great! Enjoy

Syracuse Salt Potatoes

Excellent. Do not peel the potatoes. The salt water adds a different flavor to the potatoes and they have a smoother consistency. When they come out of the water, they form a salt crust on the skins that is full of flavor.

Mom's Zucchini Bread

Follow everyone's advice, concerning the 1/2 C oil/1/2 Applesauce. The recipe made 5 mini loaves that look gorgeous. I would recommend the oat topping that others suggested. The breads look better with it and it adds a nice crunch. Superb!

Penne and Vodka Sauce

Easy and delicious. Followed some of tips suggested, add 1 shallot, 1 clove garlic while frying the pancetta and used 3/4 box penne. Added to my recipe box, a real keeper. Thanks.

Almond Crunch

Very good and easy. Read the other reviews and heating the jelly roll pan was a great idea. Spread quickly with a pan-sprayed spoon. Just a thinner toffee I think makes a better candy. I also stirred slightly after it came to a boil and it didn't affect the end result. I don't know that I would have been able to keep it from sticking to the bottom of the pan if I hadn't.

Angel Chicken Pasta

Very easy! Used low fat cream of mushroom soup, 1/2 the dry italian dressing and 1/4 cup of wine with 1/4 c of chicken broth, also low-fat cream cheese and half the butter. Everyone raved!

Iced Mocha Fusion Shake

Excellent! This will save me a ton of money and trips to Starbucks for a Frappuccino. I cut back on sugar and vanilla as advised and used Nestle's Frothe Caramel. Also, had some espresso leftover from the morning cappuchino (about 1 oz.) Absolutely fabulous!!!

Spanish Rice II

Easy and delicious! My teenage daughter and her firends love this. So much better than any packaged spanish rice product. We did garnish with some monterey jack cheese! Also, used a 14.5 oz. can of tomatoes and it was fine. A keeper.
