Slow Cooker Spicy Black-Eyed Peas

Excellent! Perfect blend of spices. Used a ham hock instead of ham/bacon, just becuase that's what I had on hand. For once, I made beans/peas and it was wiped clean.

Blueberry Buckle

Made original recipe and the batter was really thick for me, didn't spread well and was difficult to mix in fresh blueberries. Will try 1 1/2 cups next time. Good flavor though.

Easy and Delicious Chicken and Rice Casserole

Skip the pizza! This is a great, healthy run-to dinner for those 'need something easy' nights. Just switch to Instant brown rice and FF CreamOfChicken (or your preferred soup). Like other reviewers, I too mixed the rice/soup/water before adding chicken to the top..... and don't skip the Onion soup mix, it makes the dish different than other Chicken & Rice Casseroles. (I also added broccoli the second time, even better!) Very easy and yummy! Served with the prepackaged Light Caesar salad. Family loved it!!

Crustless Spinach Quiche

Didn't make it as directed(which I'm sure is wonderful as well). But giving it 5 stars because of it's diversity! To use a healthier version: I sub. 1 1/2 cup egg beaters in place of the eggs, steamed fresh spinach(just becuase we had it), added very small heads of broccoli and diced celery(yummy), for the cheese mixture, I used 1 cup low fat cottage cheese, 1 cup fat free shredded cheddar, 1/4 cup regular shredded cheddar. Added tomotatoes to the top(a must). It was GREAT! I will be trying diced ham next. Can't wait!

Spicy Bean Salsa

THANK YOU SO MUCH FOR THIS RECIPE!!It is EXCELLENT! Served over salad! Instead of adding salad ingredients (tomoatoes, bell peppers, etc..) we added this instead.. Great way to change up a salad! Next we want to try it as a topping on our chicken..yum!

Uncooked Banana Pudding

Loved this! Not your typical banana pudding, in my opinion, it is MUCH better. Very light/fluffy and not as sweet. I really like the difference the sour cream made.. Excellent!! I made it the night before and it was wonderful the next day. I did however crumble the wafers on top instead as I did't want the whole wafers to be mushy. This will definitely be my BP recipe from now on. Thanks!

Zucchini Brownies

I give this 5 star because it is so versatile. I altered to use applesauce, 1/2c sugar/ 1/2c splenda and whole wheat flour (no choco topping). It defintely satisfied my brownie craving, without the guilt!!

Eggplant Parmesan II

Jay's Signature Pizza Crust

Very good. I did however, add the extra spices as suggested by others and I'm glad I did. It needed the extra flavor for our taste. Also, as a little bonus, I rolled mozzarella string cheese sticks to the edge of the dough(like pizza hut's stuffed crust pizza), and brushed the edges with olive oil for a crisp crust. My family gave it two thumbs way up!

I am more of a chocolate chip person, but these were GREAT - once I figured out what I was doing wrong. 10 min. was about right to get the chewy cookie I was looking for. 12 min made them very crunchy. thank you for the recipe!!

Pretzel Turtles

EXCELLENT! Would give it 6 stars just for being so easy- just what I need around the holidays. I tripled my recipe to utilize as many ($$$)pecans as possible. I used 3 bags of Dove chocolates with caramel(soooooo good and creamy!!). I added the pecans (before cooking) to make it quicker for pushing into the chocolate. Cooked it for 3 min (5 min would of been way too long for me) . Drizzled chocolate on top like another reviewer, just because I liked the presentation. Makes a nice addition to the basket of cookies I'm giving to co-workers. Thank you for the easy and yummy recipe!!

Roquefort Pear Salad

My husband and I really liked this recipe. Our personal preference is spinach instead of lettuce, but did everything else exactly the same. EXCELLENT! Prettty good followed with a cup of Chai, too : )
