Carrot Cake III

GREAT recipe. I use 3/4 c. oil and 4 c. shredded carrots. Not just the easiest but the best carrot cake recipe I've tried. My fiance loves it! =)

Best Brownies

Very good brownies. Not great, nowhere near the best, but they'll do in a pinch. =) They're good enough that they don't need the frosting. They're definitely not "cake squares"--they're definitely brownies, moist and fudgy. Don't overmix, don't overbake, don't substitute or change the recipe and they'll come out as they should.

Cinnamon Coffee Cake II

My boyfriend said this was the best dessert he has EVER eaten. =D It really is the best--super simple too. The only change I made was, I added a LOT more cinnamon than the recipe called for, at least double.

Big Soft Ginger Cookies

THE PERFECT ginger cookie! This is just the cookie I have been looking for for YEARS. Mine came out not "soft" (which to me implies cake-like) but chewy, with just the right touch of crunch. I dipped them in crystal sugar, it created a pretty, festive look on a crinkled ginger cookie that I used for gift giving.

Danny's Macaroni and Cheese

This macaroni & cheese recipe is quite good. I think its more of a mac & cheese "jumble" because the cheese & tomatoes never really mix and they don't coat the macaroni like a sauce, as they do in traditional macaroni & cheese. Still, it's incredibly easy, very economical and truly tasty. My only caveat: you may want to extend the cooking time, 1/2 hour might not be long enough, depending on your oven.

Scrambled Tofu

I made some modifications to this recipe. First, I didn't put any cheese. I sauteed the tofu with diced green pepper and sliced mushrooms, and added the tomato in last. I also crumbled the tofu into the pan instead of "mashing" it, so it looked like scrambled eggs. It was a tad soupy. The vegans loved it, and I thought it was pretty good too.

Fruity Tofu Parfait with Granola

This is a good vegan recipe. I used sugar (and plenty of it ... to taste) instead of honey. I also mixed whole blackberries in to the creamed tofu, and layered it with granola and raspberries. It was easy and quick. The end result looks like custard or yogurt, and the vegans loved it. Me not being a vegan and not particularly a tofu fan, I thought it tasted fine, although the creamed tofu has a "unique" texture. My vegan friends said it was delicious, and that they aren't used to eating dairy products so they can appreciate and enjoy the flavor of tofu. Hope this review helps you vegans and the people who love and cook for them. =)

Lemon Cheese Cake

There is nothing quick, easy, or kid-friendly about making the "lemon cheese" filling. It took about 30 minutes of non-stop stirring. I don't have a clue why she called it "lemon cheese cake" and refers to the filling as "lemon cheese filling" when there is no cream cheese whatsoever in either the filling or the cake itself. Despite the misleading title, the cake itself is extremely moist. The filling is very good and lemony, the consistency and appearance is like a lemon meringue or lemon tartlet filling. One person remarked that it was "too tart" but everyone else who ate this cake said it was perfect. The cake was devoured, which says it all. =) FYI, I frosted the cake with a cream cheese/whip cream frosting and patted coconut all along the side, I think it was a good mix of flavors. Overall this is a very good recipe.
