Slim Soup

This soup is amazing. I would have never known it was a "lite" soup if I hadn't read the recipe. I think it would also be excellent with small noodles (though obviously not as slimming)

Linguine with Seafood and Sundried Tomatoes

Wow! I rarely rate recipes unless they are exception or awful, but this one was great! I changed a couple of things: I used 1/2 the amount of butter and oil and then sauteed the garlic. I then added the clam juice, sun dried tomato pieces (already softened with boiling water), salt and dried parsley. I let this cook for a while and then added a little bit more clam juice. I added the shrimp (I used 2 lbs of shrimp instead of using two kinds of seafood), and as it was cooking, I added a bit of heavy cream/whipping cream to make the sauce a little more substantial. I omitted the lemon zest as well as the pepper. I just didn't think it needed it. It was fabulous. Thanks again.

Cafeteria Carrot Souffle

Oh my Goodness! This was so fabulous. I followed everyone else's suggestion and reduced some of the ingredients ... the sugar, I think. It was soooooo wonderful!

Honey Mustard Sauce

I used the comments of others, and used this recipe as a base. I was making this for my children (and I am partial to the bright yellow, very sweet kind myself). So ... I used 1/4 c. yellow mustard, 1/2 cup of honey, and only 1/2 c. of mayonnaise. It was PERFECT!

Turkey Enchiladas

I think this was really good, but I think I would add a packet of taco seasoning. I thought it was a little bit underseasoned. I layered the tortillas so make a lasagna type dish, and I thought it was really good

Sweet Pasta Salad

This made a lot, so I had leftovers. I can't stay away from the bowl, and with all those grams of fat, that's not a good thing. To me, it tastes exactly like KFC slaw, but in a pasta salad. It was a little too soupy for me, though, so next time, I'll reduce the mayo/evap milk/vinegar and then add them back as the texture requires.

Crab Stuffed Flounder

This was quite good. We didn't have any crabmeat, but we did have some shrimp, so we used this instead. Very tasty. The children didn't like the stuffing part, but they did enjoy the fish. We thought it was great, and there were no leftovers! Thanks!

What did I do wrong? I unfortunately did not read some of the reviews that recommended adding the clam juice. I think this would have made a world of difference. I thought the sauce was a bit bland. I doubt I will make this again.

Barbecued Beef

This was really good! My hard-to-please husband who believes that good things can only come from a Le Creuset pot or a Khuhn Pressure Cooker, even said in a surprised voice "Wow, Hon, this is really good." The kids ate every bit too. I used about 50% of the recipe sauce, 50% of a hickory smoke bottled BBQ sauce, and then added a bit more brown sugar. I cut the meat into cubes, and cut out most of the fat, so there was no need to use "freshly made sauce" like some people suggested. I will definitely make this again!

Caramel Apple Pork Chops

Although I cooked my chops a little too long (I cooked them longer than the 5 or 6 minutes each side), the taste was wonderful. Even my husband, who is a good cook himself and therefore is ALWAYS offerring suggestions for improvements on my cooking, said that the sauce was delicious. I caught him trying to spoon some up out of the pan. Thanks (finally) for a meal that he liked!

Enchilada Casserole II

I thought this had a bit too much tomato sauce and not enough tortillas. If I made it again, I would use less sauce, more tortillas, more cumin & more cheese.
