Kale and Quinoa with Creole Seasoning

I used blanched and shocked endive instead of kale, and it was a bit too bitter. Season with Creole seasoning first and use low sodium chicken broth. Mine was too salty.

Roasted Beets and Sauteed Beet Greens

It doesn't help that I'm not a real big beet fan unless they're pickled just right, but I did not care for the beet greens. I won't do this one again.

Grilled Spicy Lamb Burgers

inadvertently included fresh chopped peppermint as opposed to cilantro in asparagus sauce, which started with lemon-lime buerre blanc thickened with roux. Added equal amount of cilantro, and it was delicious on both grilled asparagus as well as on the lamb burgers

Mostly Whole Wheat Blueberry Pancakes

The Best Zucchini Bread

This zucchini bread recipe was easy to make up, and even easier to eat too quickly. I used one large zuc, and have a lot left over after de-seeding a bit, shredding it in the food processor and then chopping it. I'll make more tomorrow after getting more nuts. If I change anything, I'll add another cup of zuc, and reduce the cinnamon by 1 tsp. Definitely wait 15 mins after removing from the oven before popping it out onto a rack to cool. Delish!
