Cowboy Oatmeal Cookies

I made these cookies with only one change. I used chocolate chips. My family and I agree that this is a great recipe. A single recipe made over 8 dozen cookies and they're going fast! I was concerned that the batter was too dry, but the cookies spread nicely. A real winner!

Four Layer Delight

i decided to take the advice of GRT2BME and used a box of crushed pecan sandies mixed with a cup of butter. I had to crush three more boxes of Sandies before I had a crust. And then I had enough to make four pans! I think this must be a typo and SHOULD READ 1/4 CUP OF BUTTER. But the dessert is delicious!

Choco Peanut Butter Cookies

I could tell from the ingredients and the reviews that I would like this cookie. But I made several changes and got wonderful results. I used 1 1/2 cups of peanut butter. I decreased the rolled oats to 2 cups and added a bag of Reese's peanut butter chips. I dropped the cookies (generously rounded teaspoonsful) rather than rolling them. Otherwise, I followed the recipe. What great cookies!

Hot Ham and Cheese Sandwiches

To up this recipe to a 5 star rating: Buy a package of small sandwich rolls (actually they're dinner rolls) that are baked but are not separated. Slice the whole thing in half, horizontally. Spread first w/butter, then w/mustard, then w/mayonnaise. Cover with sliced or chipped ham, and swiss or American cheese. Wrap in foil. Place in 300 degree oven (preheated) for 15-20 minutes. Unwrap. Cool slightly. Then place on wood cutting board and cut with sharp knife. Great w/soup or as a light lunch.

Old-Fashioned Rice Pudding II
