Chicken Artichoke Bacon Dip

I have made this recipe now at least 5 times. I'm going to be honest - I usually don't like Spinach-Artichoke dip (like in restaurants), but this dip is AWESOME! I'm to the point where I don't even follow the suggested ingredient ratios any longer -- I just take each ingredient - use the amount I think will be good (or however much I have on hand) and mix it all up in a bowl - then bake it at 350 degrees until it is bubbley and yummy-looking.

Blueberry Cream Cheese Muffins

Loved these muffins. I made them EXACTLY as written. I filled each cup with a total 3T of the batter + filling + batter. This filled each cup to the top. M muffins came out nice a round and beautiful (they weren't flat-topped as others have mentioned -- even after they cooled). I also had NO batter left, although I had quite a bit of unused filling left over. If you are filling the muffin cups to the top, you will not have batter left over. It is true, the "filling" part is not a creamy, gooey center as the recipes descriptions would have you believe. However, that didn't matter at all to me, because I thought the muffins tasted so good! I also used the olive oil, and I still thought that they tasted great! :D

Broccoli Hamburger Casserole

I made this recipe this past weekend, and followed the directions exactly as written. The texture of the cassarole was quite soupy. Due to this, my partner and I decided to eat this dish as a dip with white corn tortilla chips. As a dip, it is fantastic! (LOL) My advice, if making this as a main course dish, is to pat-dry your broccoli once it has been steamed/cooked/boiled. Also, I would recommend cutting the soup in half and using slightly less sour cream. I think with those changes, the dish would come out more as a standard broccoli cassarole dish that's not too soupy. :)
