Colleen's Slow Cooker Jambalaya

I cooked whole boneless thighs, the sausage, and the tomatoes & broth in the crockpot. Before serving, I chopped the chicken, then I sautéed the peppers, onions and a bit of garlic & added it to the crockpot, along with a couple cups of cooked rice. The rice absorbed a lot of the liquid. We loved it!

Fresh Southern Peach Cobbler

Chocolate Zucchini Bread II

Great option when you have lots of zucchini! Try adding a little cayenne pepper (1/8 - 1/4 tsp.) for a little Mexican twist!

Mexican Sour Cream Rice

Made this for an extended family "taco day" and it went very well, enjoyed by adults and kids alike. I think it would go very well with anything spicy as the sour cream is a nice contrast.

Tortellini Carbonara

Although not a true carbonara, this was excellent! So fast and easy! I browned chopped bacon in a large saucepan, removed and drained it, then prepared the sauce in the same pan. My only addition to the recipe was about a tablespoon of minced garlic from a jar. The sauce was finished first so I kept it on low and added a few drizzles of half-and-half two or three times to keep it a nice consistency. We enjoyed a nice pinot grigio with this delicious meal. This is good enough for company!

Salmon Cakes II

Have tried many salmon cake recipes over the years and have never been completely satisfied with any. I think I finally found a keeper! The cheese adds an interesting flavor, and I like the way the cakes fried nicely and stayed together. Served mine with a garlic aioli sauce (the picture looks like that's what they used) and we loved them!

Shepherd's Pie Daddy's Way

Followed the recipe exactly and it tasted very good, but the meat "crust" didn't stay together as it does on other shepherd's pie recipes I've used. I also like a layer of vegetables between the meat and potatoes.

Penne with Chicken and Asparagus

This was tasty, but definitely on the lighter side. I added mucho extra garlic, olive oil, and chicken broth to boost the flavor, but we did like it and I would make it again.

Chicken Breasts with Lime Sauce

Lime is one of my favorite flavors, but I just wasn't impressed with this dish. It was good, but I was expecting more flavor. I liked that it was fast, easy to prepare and didn't require many ingredients, but it just seems that something was needed to give it a little pizzaz.

New England Clam Chowder I

Gulaschsuppe

The broth was very close to a delicious veal gulaschsuppe I had recently in Austria. I followed the recipe exactly and we really liked it. Definitely recommend adding the sour cream, and I served it over some bagged "light and fluffy macaroni dumplings." Next time, though, to get a little closer to the Austrian version, I will use veal and/or pork, a little more red pepper flakes, and of course make some spaetzel to go with it.

Dessert Crepes

These cooked up beautifully and smell wonderful. It was really pretty easy. Plan to add masacapone cheese, chocolate chips, and strawberries, garnished with whipped cream and chocolate sauce!

Absolutely Ultimate Potato Soup

Just finished two bowls of this rich, creamy and delicious soup! The only change I made was to substitute fresh parsley for the cilantro. When I make it again, I will use very little or no tarragon at all. I just tasted it too much. But what a great recipe!

Bow Ties with Sausage, Tomatoes and Cream

We loved this slightly spicy, creamy dish. Easy and fast to make, great for a weeknight supper. The only change I made was to add a sprinkle of dried basil to the sauce.
