Shrimp Scampi Bake

I made this recipe as written except for a few exceptions. I cooked the shrimp for 5-7 minutes, then put it under the broiler for another 2 minutes. My 13-year-old son loves this recipe and says it taste better than Red Lobster's shrimp scampi.

French Toast Casserole

This recipe is a keeper. I tweaked the recipe a little to cut down on some of the carbs (I'm pre-diabetic) by using 1c. of milk and 1/2c. of almond milk along with 2 Tbsp. of sugar and 2 Tbsp. of Splenda. These changes did not compromise the taste. Next time I will try using just almond milk and/or Splenda. Btw, I also used three-day-old homemade sourdough bread.

Green Bean Casserole II

I change the recipe some: 40oz can green beans, 25oz can of cream of mushroom and the same amount of milk called in the recipe. Turns out creamy and delicious.

Easy Sugar Cookies

My cookie dough was still crumbly even though I let the butter sit out for at least an hour. I ended up adding 1/4c. of melted butter and a extra tsp. of vanilla extract. Used a plastic spoon to measure out the dough, rolled in the palm of my hand and dipped them in powdered sugar. Was able to make 70 delicious cookies out of this one batch.

Chocolate Butter-Creme Frosting

This will definitely become my go-to frosting. I substituted evaporated milk for regular milk and used two squares instead of 1-1/2. Loved it!!

Sweet Potato Casserole I

I followed suggestions made by Ron and decreased my sugar to 1/2 cup and added cinnamon, pumpkin spice, and ginger. I also used evaporated milk instead of regular milk. My son said it was better than my mom's version; this is definitely my go-to recipe for now on.

I found these pancakes to be delicious and fluffy. I did not have any almond milk, so I used 2% milk and added an extra tablespoon of sugar and 1/2 teaspoon of vanilla extract.

Simple Strawberry Sauce

I used frozen strawberries instead of fresh one. It still turned out good. @Grandma Jones, sometimes you just need reassurance that you are going about the correct way of making strawberry sauce and others truly do not know how to make this dessert. Please do not assume everyone is proficient at all cooking (and non-cooking) methods. Even a child must first learn how to boil water before they can cook a hard-boiled egg.

Hot Milk Sponge Cake I

I used this cake to make a strawberry shortcake. Although it was easy to make, the cake was a little on the dry side. However, the juice from the strawberry sauce remedied that.
