Pumpkin Black Bean Soup

I can't say that I followed it perfectly, but I think that the cover photo should certainly be different. Not only does the soup look like mud, but it lacks texture. I recommend only blending one can of black beans, and using chunks of fresh butternut squash along with the can of pumpkin. Otherwise, the soup is a nice base.

Hungarian Mushroom Soup

This soup was amazing. I added half of the smoked sweet paprika, dill, and parsley like others had recommended. I added about 3/4 cups chopped, reconstituted shitake mushrooms soaked in about a cup of boiling water. I think the juice of the dried mushrooms adds extra flavor. To make it vegetarian, I used vegetable broth.
