Chicken Marsala Florentine

Easy and very good. When you pan-fry the chicken, try adding the marsala wine for a little more flavor.

Pork Tenderloin in Bourbon

This recipe is easy, and it's great for entertaining. I really recommend marinating it overnight. I double the garlic and also add a TBSP of chopped fresh ginger as well as some fresh rosemary. I have served it many times with haricots verts and creamy garlic-herb mashed potatoes.

Cheddar Pecan Wafers

These are a delicious riff on regular cheese wafers. The addition of the pecans makes them a little sweeter, which is nice. It is VERY important to use the best quality cheddar that you can find. Buy the block and grate it yourself. Trust me-- you will realize the difference.

Healthy Banana Cookies

These are definitely great for breakfast on the go. I added a few chopped strawberries (and some extra oats) and pecans. I also threw in some ground flax seed for good measure, and to make them even more healthy. As other reviewers note, they're not super sweet. I'd never serve them as dessert, but for breakfast on the go or a quick snack, these fit the bill.

Power Cookies

This would have 5 stars, but along with everyone else here, I added about a cup or more of liquid (vanilla soy milk) to the mix. Next time, I'll prob add a beaten egg white too. I also added mini dark chocolate chips, dried cherries, and chopped pecans instead of walnuts.

Indian Curried Barley Pilaf

I wouldn't serve this as a main dish, but as a side dish, it's a nice start. I added 1/2 cup of lentils along with some extra liquid. In addition, I added 1 tbsp each of ginger and garlic, more curry, and skipped the allspice. I love the idea of barley instead of rice. Thanks for the inspiration!

Addictive Sweet Potato Burritos

If you sub black beans, this is very similar to the Sweet Potato and Black Bean Burrito recipe by the Moosewood cookbook series. These are fantastic.

Eastern North Carolina BBQ Sauce

This is a very authentic Eastern Carolina-style sauce. It's spicy and great on pulled pork. I added a little onion powder, garlic powder, and a little dried thyme, but other than that, it's perfect.

Classic BOCA® Chili

This recipe is easy, delicious, and healthy! I substitute Boca crumbles for ground beef in almost all of my cooking. I normally just add prepackaged chili seasoning (instead of the cumin and chili powder) and a jalepeno. I've served this to guests before, and no one has ever known that it's not beef!

Chili I

The description mentions ground cumin, but the recipe calls for cumin seeds? I used cumin seeds but will definitely switch to ground next time around. I love the depth of flavor in this chili and will definitely make it again. I halved the sugar and will probably use even less next time as well. The only big change I made was to use fire roasted tomatoes, which were delicious.
