Burger or Hot Dog Buns

This is a great recipe. I made it exactly as specified except I put in 2 teaspoons of salt. I put the ingredients in my bread machine and used my dough cycle. Once the dough had rested for 10 minutes, I worked it until it was able to shape it into rectangle and instead of forming balls of dough and flattening them, I just used a big round biscuit cutter to make each bun. I let them rise another 1/2 hour and they came out perfect. I did rub butter on them when they came out of the oven to keep the crust soft. Thank you for the wonderful recipe.

Traditional Gyro Meat

I followed the recipe exactly (except I added more salt) and it tasted wonderful but was very dry. Next time I will cook to medium, slice and finish the browning on the grill.

Portuguese Sweet Bread I

Absolutely delicious bread. I made it in my bread machine using the sweet bread setting and it came out perfect. I used fat free evaporated milk and once I substituted honey for the sugar but went back to using just sugar as my family preferred it. It is remarkable toasted with butter and makes excellent french toast.

No Bake Lime Mousse Torte

This recipe is absolutely delicious. I wanted to make it exactly as suggested but I couldn't bring myself to add 3-8oz packages of full fat cream cheese, so I substituted 2 of them with non fat cream cheese. It came out luscious and creamy but firm enough from the gelatin to keep its shape when cut. I kept the butter in the crumbs (note: break up the cookies before processing them if you are using a food processor. Mine almost walked off the counter even after I added the butter because I left them whole) I didn't have a springform pan so I just pressed the crumbs on the bottom and sides of a 13x9 pyrex dish. I thought it might be too small but the mousse mixture filled it up and looked pretty I will definitely make this recipe again but will use all non fat cream cheese and packaged dream whip for the whipping cream. I think if I warm a little fat free evaporated milk, that will do to melt the chips in or I might omit them and add vanilla to the dream whip. Thank you for posting this great dessert.
