Yellow Squash Casserole
I don't know what I did wrong, because everyone else seems to have liked this, but I thought it was kind of unappetizing. I made the recipe exactly as posted except for substituting zucchini for half of the yellow squash. Anyway, it was super bland, watery, and I felt like it never really solidifed into a casserole. Maybe I cooked the squash and zucchini too long? Or didn't drain it enough? Either way, I would recommend using about twice the cheese, and make sure it's a medium or sharp cheddar rather than mild. We couldn't even taste the cheese in ours. Maybe try some of the other reviewers' suggestions about using only 1 egg? I really don't know. I will not be using this recipe again.
