Big Soft Ginger Cookies

Reviewed: Jan. 15, 2012
These cookies were a huge hit. They stayed soft and were absolutely delicious. I might try putting a glaze on top next time, but that is just something I think sounds good. Really, following the recipe makes a very excellent cookie and there is no need to change anything.

Cherry and Raisin Loaf

Reviewed: Nov. 5, 2011
I made the recipe exactly as written and I thought it was very good. However, the next time I make it, I will add more brown sugar and more cinnamon. I may even add more cherries or raisins. Overall, this is a pretty good recipe...thanks for sharing!

Frozen Chocolate Chip Cookie Dough Balls

Reviewed: Oct. 16, 2011
I could take or leave this recipe. If I were to make it again, I would put in only 1 teaspoon of vanilla and substitute half of the brown sugar for white sugar. I really love vanilla, but it was overpowering in this recipe. I ate about half of the cookie dough balls over the course of a week and then decided that I wasn't enjoying them enough to justify the amount of calories that they were and I threw the rest away. I like the thought of cookie dough without raw egg, but this quite do it for me.

Slow Cooker Apple Butter

Reviewed: Sep. 17, 2011
I cut this recipe in half and it still made a ton of Apple Butter. I used about 2/3 the amount of sugar (brown and white) that the recipe calls for and it turned out awesome! I even gave the stuff out at work and everyone who tried it LOVED it. The hardest part was peeling all those apples. Once peeled, I put the chunks of apple (minus the seeds of course) through the grater attachment of my food processor. Then, when I put the sugar in, I tested to see how chunky the apple butter was. It was still a little too chunky for my taste, so I took a potato masher and used that to stir/mash in the sugar. This is an awesome recipe!!

Blueberry Cream Muffins

Reviewed: Apr. 5, 2011
Very easy! I cooked these for just me, so I quartered the recipe and only made 6 of them. That was last night and only three of them are left this morning. They are very tasty. I used fozen blueberries because I find that folding them into the batter is easier and they don't break apart right away.

Blonde Brownies I

Reviewed: Mar. 13, 2011
These were fine, but nothing special. There was so much brown sugar that even after mixing it very well and baking it, I could still taste the graininess of the brown sugar. And I love brown sugar! But it just seemed that there was an ingredient missing or something off about this recipe.

Key Lime Pie VII

Reviewed: Dec. 18, 2010
Used low-fat sweetened condensed milk and sour cream. Also used Nellie & Joe's Famous Key West Lime Juice instead of squeezing limes. My prep time was no more than 5 minutes and I baked the pies in pre-made mini graham cracker crusts that came in a pack of 6. I halved the recipe, filled all 6 of the mini graham cracker crusts and had maybe two tbsp of filling left over. Rave reviews all around.

Rick's Special Buttercream Frosting

Reviewed: Aug. 21, 2010
I have made this frosting several times now and it is delicious. However, I do find that I have a lot of trouble decorating with it. I have been taking a cake decorating class and by a half hour into the class, the frosting has warmed to the point where it is unmanageable. The key to this frosting is keeping it cold 100% of the time.

Moist Caramel Apple Cake

Reviewed: Jul. 28, 2010
I liked this cake, but it was very very moist. I put on the caramel topping after the cake had cooled completely and the caramel was cool but still soft. The cake looked beautiful, but about two hours later, the caramel had absorbed into the cake or fallen off the cake and the cake looked mushy and old. If you make this recipe for an event, I suggest waiting until the last second to put that topping on.

PHILLY Creamy Basil and Red Pepper Pasta

Reviewed: Jun. 12, 2010
I won't be making this one again. However, I must admit that I'm not the biggest fan of red peppers. I like them in moderation, but this was red peppers with a little bit of all the other ingredients.

Chuck's Favorite Mac and Cheese

Reviewed: Dec. 2, 2009
There wasn't anything I liked about this dish. I did leave off the bread crumbs...maybe they were the key ingredient, I don't know. It just wasn't the smooth, creamy, cheesy dish I thought it would be.

Onion Roasted Sweet Potatoes

Reviewed: Dec. 2, 2009
I made these for Thanksgiving for my fiancee. He hates onions, but he LOVED this recipe. He kept saying that this recipe is a keeper and how good they were. I followed the recipe exactly, but I cooked the potatos at a lower temp because they needed to share the oven with the green bean casserole and turkey. However, I did brush them with a small bit of olive oil and turned the oven temp up to 425 at the end in order to brown them up. Great recipe!

Creamy Cheese Bread

Reviewed: Nov. 12, 2008
I made this bread for a dinner with a bunch of friends. It was a HUGE hit. Everyone loved it. I couldn't find shredded swiss cheese, so I just used shredded italian cheese. I also added a little more cheese than the recipe called for. This was a delicious recipe.

Creme Fraiche Chicken

Reviewed: Dec. 13, 2007
I love this recipe. I have made it several times over the past couple years and it has always been good. I sometimes substitute the chicken for shrimp, or do a mixture of both. The only trouble I have is finding the creme fraiche. But I see someone has written a review with instructions on how to make the creme fraiche, so I may give that a try.
