Traditional Style Vegan Shepherd's Pie

I have never had traditional Shepherd's pies but my husband said he used to love it before he became a vegetarian. It came out absolutely fabulous! Even my five year old son didn't say a word about all the veggies in it and finished his whole plate.

Blueberry and Raspberry Pancake Topping

Chocolate Chip Bran Muffins

I am disappointed in these. I think I was expecting too much. The first batch was still wet in the center at 14 minutes but burnt by 17. The second batch looks better, ( I lowered the temp to 350 for 17 minutes). I prefer bran muffins with a heartier texture. The batter reminded me of plain flour muffins with a bit of bran flecks. Do not get me wrong...I ate three, but I do not think I will use this particular recipe again.

Pasta e Olio

I am not giving this any stars because the recipe must be off. I made the recipe as it is and it seemed strange that it was a pound of pasta with such small measurements for the other ingredients but I did it anyway. Sure enough it came out like plain buttered noodles and dry at that. I had to add a cup of feta I had in the fridge and a cup of calamata olives with more olive oil to make it edible. The picture looks like it would take a 1/4 pound of pasta with the those other measurements. Oh well.

Vegetarian Cake

Fantastic cake! Perfect if you like a treat that's satisfying but not too sweet. I could not find currants so I substituted them with dried cherries:) I'm keeping the cherries in. I will definitely make this again and pass the recipe on to friends.

Vegetable and Feta Latkes

I did not like these. I thought there was too much egg. I prefer my husbands recipe with only one egg. Plus, I think it needs more feta. I do not think I'll make these again.

Cookie Balls

They tasted better than I thought they would when I was making them. They taste very good but much too sweet for me. I also did not read the notes with tips on dipping the coating and it was a mess. Fun to try but I do not think I would make them again.

Fried Mac and Cheese Balls

They turned out picture perfect and were delicious. Next time I would like to try it with macaroni pasta instead of a mix and skip the pimento cheese. I will be making these again though.

Creamy String Bean Soup

I did the recipe as stated and then added thinly sliced celery and chopped radish greens. It was incredible. I used fresh string beans and started them at the same time as the potatoes. Thank you for the recipe:)

Tasty Breaded Seitan

changed my rating from 4 to 5 because last time I tried it with tofu and this time seitan. No comparison -it's amazing with seitan. My husband's new favorite dish. Oh yeah, cut all the seasonings in half for my kids.

Baked Kale Chips

I would give it six stars if I could. This is my new favorite snack of all time. I did not have parchment paper so I put the olive oil on the bottom of the pan and baked for 8 minutes. First batch I did too salty, second batch better. Go very light on the sea salt a tiny bit goes a long way on these chips. So glad I found this recipe!!!

Black Bean Brownies

They came out incredible. I blended everything very smooth and my kids did not even know there were beans in them. I did not have cocoa powder at home so I took the half cup chocolate chips and blended them in too. Who needs flour:)

Vegetarian Kale Soup

Fantastic. Change it up a bit due to what I had at home. I added a bunch of parsley, chopped green pepper, fresh chopped tomatoes instead of canned, no cannellini beans and only three potatoes. Can't wait to make it again. It was even better the next few days.

Blue Cheese Pear Salad

It was very good. There was too much dressing for the salad and next time I will cut down on the vinegar amount. I used spinach instead of mixed greens and added more blue cheese. I will make this again with the few changes.
