About this Cook
I'm a terminally single parent & love to cook with friends, and I'm finding out the hard way that kids aren't friends! I like recipes that are quick, healthy, not lots of ingredients. I like all kinds of food but my teens are pretty picky. We need more fresh veggies in our diet. We live on the gulf coast.
My favorite things to cook
easy casseroles, slow cooker meals, few-ingredient meals. We like asian, mexican, italian, healthy.
My cooking triumphs
mangamole. Look it up. Fabulous recipe that doesn't even show up when I run a search for guacamole. Real shame. Last time I made it I added peaches too. Incredible treat. Taco soup. My kids love it.
My cooking tragedies
My inability, so far, to lead my kids into the kitchen. I've cooked under stress for so long that my children think the kitchen is the place for yelling. I think I still have time to change this. I work on it during each meal. Writing a cookbook for beginners called: "Zen and the Art of Stovetop Maintenance". Just kidding. It's really called "How to have a great family and still stay divorced". Not really. I think I'll call it "Eat, Don't Yell, Love". Or how about, "Things I wish I'd Cooked When I Still Had Lovers", aka, "Naked Lunch: A Fond Remembrance"

Dorsey's Fried Oysters
Pretty good. Easy batter to make. I used this for the ones too big to eat raw. The batter made them sweet, but still too dang big to eat once they're fried. Note to self: big oysters need a po' boy bun and some fixin's. I'll let them cook longer next time. I don't think you can easily overcook an oyster. Lots of juice!

Slow Cooker Chicken Taco Soup
Excellent. Easy to prepare. Forgot to add either beer or chicken stock last time, but I use all the juice from the cans. No one even noticed.
