Ginger Banana Bread

As with most quick breads, this tastes better the day after you make it. I think next time I'll play around with the spice levels a bit. All in all a good bread, though.

Chicken Stuff

Oddly enough, I think this would taste better without the chicken. As others suggested, I reduced the butter (possibly a bit too much). A little extra salt & pepper after cooking went a long way in upping the flavor. Tasted really good warmed up the next day. My husband loved it.

Cindy's Yellow Rice

A little bland, but it made an excellent base for the curry I'd made. I put all the ingredients in my rice cooker rather than doing it on the stovetop. Very easy! I would definitely make this again; if I were serving it as a side on it's own I'd want to jazz it up a little with some stronger spices & garlic.

Carrot Souffle

This is excellent! I followed the advice of others by reducing the sugar to 1/2 cup and adding some cinnamon & nutmeg. Really delicious. I noticed the written recipe says to bake 45 minutes while the bit above the recipe says 1 hour. It looked done after 45 minutes but turned out to still be pretty wet in the middle; next time I will bake it for the full hour.

Ethiopian Cabbage Dish

I used red cabbage, baby red potatoes & rainbow carrots as that's what I had on hand. Perhaps I just didn't have the heat high enough, but I had to add 20 minutes to the cook time in order to get the potatoes cooked through. Very tasty once it was done, though.

Bill's Sausage Gravy

So easy & delicious! I used regular sausage instead of maple since that is what I had on hand, served on refrigerator biscuits for a quick and satisfying breakfast. Definitely recommend this recipe.

Lemon Curd

A perfect balance of tart and sweet, and so easy to make! I don't have a double-boiler, so I prepared this in a Pyrex bowl set over a pot of simmering water. I'd give this recipe ten stars if I could.

Strawberry Bread

This made excellent muffins; filled the cups almost full & baked 25 minutes per batch (2 dozen muffins). I also used a full pound of berries. Definitely a winner!

Individual Baked Eggs

I'm in the minority here as I wasn't impressed with this at all. A rather bland dish, it's badly in need of some doctoring up; maybe scramble the egg a bit first so you don't have that hard-cooked yolk lump in the middle, add some green onion and black pepper to jazz things up. A dollop of salsa or sour cream after cooking would not be amiss either. My husband and I ended up peeling the bacon off, eating that & giving the rest to the dogs. All in all, this is not something I'm going to make again.

Roast Beef with Coffee

Neither my husband nor I cared for this recipe. The meat was dry and not very flavorful, and the gravy was just so-so. The ingredient list says to mince the garlic; the instructions say to use whole cloves. I cut the cloves into thirds and they did not cook through; they were crunchy and harsh-tasting. Not something I will make again.

Chewy Cocoa Brownies

I prefer a fudgier, chewier brownie than this recipe produces. I baked them for 18 minutes & I think that may have been a couple minutes too long. Next time I will try using leftover coffee instead of the water & vanilla.

Glazed Lemon Bundt Cake

A mild citrus flavor to the cake is kicked up by the extremely lemony glaze. I didn't have any lemon extract so used orange extract instead; this is the only change I made to the recipe. No, I tell a lie, I also followed the advice of others and used sugar instead of flour when I greased the pan; it worked like a charm, and no white residue to boot. The next time I make it, I will use powdered sugar instead of granulated for the glaze, as it came out just a wee bit crunchy. This might also be good made with orange juice/zest, adjusting the sugar since oranges are sweeter than lemons.

Spicy Honey Mustard Pork Roast

Far too much pepper; my husband & I trimmed off the outside because we just couldn't eat it. The inside, however, was juicy & tender, very good indeed. Next time I make it I will reduce the pepper to about a teaspoon.

Spinach Strudels

Five stars for flavor, one star knocked down for how fussy these are to make. I think I was overly generous on the breadcrumbs & butter as I needed more than the recipe called for, and I was only using 5 sheets of phyllo as others have recommended. I prepped them on a sheet of foil & used that to help roll it up; waxed paper would probably have been a better choice although the foil worked well enough. Also, a fresh sheet for each roll-up would be good, as the foil got rather buttery & the outer sheet of phyllo stuck like a suction cup on the second roll-up. I will probably make these again although it's not going to be an everyday recipe for me.

Acorn Squash Slices

Absolutely delicious; slightly sweet, nutty, with a flavor reminiscent of pumpkin. The pecans added just the right touch. I had difficulty getting the squash slices cut evenly; next time I will cut it into chunks as others have suggested.
