Garlic-Lemon Double Stuffed Chicken

This was killlllaaaa. I used 5 large chicken breasts sliced in half then i made them into pinwheels instead of butterflying them. I used 1/2 the amount required for the cream cheese, used Panko crumbs instead of breadcrumbs and added lemon rosemary seasoning to them. Before putting them in the oven I put a lemon slice on top of each pinwheel. Served over thin spaghetti and used the butter from the pan as sauce. AMAZING!

Carrot Cake III

Pretty good cake. My mother in law loved it but I think next time I will definitely add more cinnamon and some nutmeg along with using a cup of brown sugar.

Too Much Chocolate Cake

This is soooo moist and delicious. After trying this my husband decided I NEED to open a bakery because people would pay big money for my cakes. haha This was one of the cakes I made for my kids' birthday party and everyone that tried this said it was to die for. GREAT RECIPE!

Strawberries and Cream Cake

Ok. I had quite the incident with this cake. Previous to making this cake I made a brownie cheese cake and part of the brownie mix had dripped in my oven and without thinking I put this cake in and it came out tasting terribly burnt but the bite my husband tried he did mention it tasted extremely chewy. I had read the reviews from others about it tasting rubbery but I thought that maybe they had used all purpose flour instead of cake flour (but apparently that wasn't the case). Anyway, I was just going to do away with this cake because I had enough dessert planned for my party but being as nuts as me I couldn't sleep thinking about it haha. So I ended up using a yellow cake mix and prepared it as instructed on the box then added the strawberry gelatin and the pureed strawberries. The cake was FABULOUS! The frosting was great too. I will definitely make this cake again!

Brownie Chocolate Chip Cheesecake

I'm giving this 5 stars and I didn't even try it! I made this for a family reunion yesturday. When I showed up my aunt asked if I could run down the road to get some ice. Well when I came back from the store the whole thing was gone! I got rave reviews for the rest of the day!!

Baked Scallops

Came out great! Thank you to the person who filled me in about not letting the scallops touch the side of the pan! I had no rubbery spots! I mixed the scallops in with the melted butter and then I put them in the bowl with bread crumb mixture and mixed them up before putting them in the baking dish. Very easy and very delicious!

Roasted Italian Herb Chicken

AWESOME. Very moist! I was running short on time and only marinated the chicken for about an hour and it was still extremely flavorful! My son who eats pretty close to NOTHING without being force ate a HUGE breast and kept asking us for more! He even requested the left overs for lunch the next day!
