Chicken Marsala

Amazing meal. I've made it many times exactly as written and it always turns out perfect. When I don't have Marsala wine I use whatever red wine I have and it still turns out great. I double the mushrooms sometimes just because they're so good.

Best Brownies

I followed the recipe exactly and they were amazing. They are not too sweet and definitely not too cakey, just perfect. I did not use an electric mixer, just mixed by hand until all the flower lumps were gone. Big hit at work.

Mini Cheesecakes I

These were amazing. Didn't have a mini tray so used a regular muffin tray and baked for 25min. Put some fresh strawberry slices on top (instead of pie filling) and they looked as good as they tasted. My husband is gluten free so instead of the wafers I crushed several gluten free pecan cookies as the crust and it turned out delicious.

Jalapeno Popper Spread

It's good as is but I like to add a thin layer of cheddar on the top and broil at the end... delicious and looks a bit more interesting. I also use 4 large fresh jalapenos instead of canned and bake at 375 for 20 minutes. Absolutely amazing. Oh, I find it faster and easier to puree the mayo with the peppers, and then use a hand mixer to whip the mayo mixture with the cream cheese - really mixes it well and gives it a silky smooth texture.

Greek Lentil Soup (Fakes)

This is very good and healthy too. Red wine vinegar is mandatory, the traditional greek way. I've used chicken or beef broth for extra flavour and cumin & chili powder instead of oregano and rosemary and it's very good too. I skip the tomato paste and use a spoon or two of tomato sauce, but it could be skipped entirely and still taste great.

Chicken Stir-Fry
