Crispy and Tender Baked Chicken Thighs

Wonderful blend of spices. Amazingly, the chicken is crispy! Didn't have garlic or onion salt, so used powders instead, then just salted as I usually do. Used whole hind quarters at 350 deg. and chicken was done in 1 hr. Checked with instant read thermometer, just to be sure. Thank you for a great blend of spices. As soon as I run out of all the special seasonings for chicken, this will be made in larger quantity and will be the only one I'll ever need Flagger Mom

Shrimp Scampi

Simple! Easy! Quick! Delicious! What more could you ask for? I, also marinated the shrimp, using more garlic, about 6 cloves for the pound of shrimp.

Sweet Potato Apple Scallop

Best sweet potato recipe ever! Everyone had 2 or more helpings - even son, who has never cared for them. I made this the day before Thanksgiving, then nuked them to reheat. Used my orange zest instead of extract, which made them zing.

Quick Poached Salmon with Dill Mustard Sauce

Oh, m'gosh! Delish! Didn't have yogurt & used mayo. DO WATCH poaching time. I've found that 5 min/inch for the thickest part is quite sufficient to fully cook thru, yet not dry out.

Braised Lamb Shanks

Delish! Love the flavor. Adding a bit more brown sugar, or cutting down on the vinegar really does the trick. Too bad Lamb Shanks are not always readily available in my area.

Restaurant Style Egg Drop Soup

For those who have time-make your own chicken broth. It's even better. This is a fabulous recipe. Keep in mind that the egg thickens the soup - a lot! I'll be making this again, for sure!!

Fruited Curry Chicken Salad

Sooo good! Definitely add honey to the dressing before pouring over salad. Leaving the peel on the apple is more nutritious & adds color & texture. Serve atop a bed of mixed greens. Even better next day.

Sour Cream Refrigerator Mashed Potatoes

Been doing this one for a couple of years. Great because it's prepped the day before company comes. For a change of pace, try adding horseradish or sauteed onions, leeks, andor shredded cheese (your choice). Experiment with this one.
