this is great,easy, and flexible! everything I love in a recipe. to make life extra easy, use canned chx. However, I cook it all day in crockpot on low in chx broth and shreads virtually on its own!

Salmon with Fruit Salsa

This was very tasty, although I would recommend covering and not cooking as long! The salsa was great although kids didn't feel the same. Cliantro and watermellon were added with less jalap. A nice change of pace for salmon!

Shrimp Burritos

A bit of work (spanish rice from scratch) but oohhhh so yummy. Rave reviews from the whole family. Only problem was not enough shrimp! Next time will use a bigger bag (or eat less while cooking!) Also, be sure to get burrito sized tortillia vs "soft taco" otherwise you have well, shrimp tacos! Even the leftover rice and beans made for yummy leftovers. The sauce is yum too! A little tip since the peppers come in a can of more than two... take them and freeze them two to a snack bag. Then thaw them and use!

Burrito Pie

Cooked as written by engineer husband who can't improvise... must follow instructions! We only had one can of beans which turned out to be a good problem. Family LOVED it. He cooked in a roasting pan, but next time I will double the tortillias and try in a round casserole. We loved having left overs! Fantastic recipe!

Easy Vegetable Pot Pie

I too added a can of chicken and some chopped potatoes. Big mistake was using frozen veggies and not thawing. If you do use frozen... either defrost or plan on a longer cooking time at a lower temp... protect the edges of the crust. But holy cow.... not only Easy But flexible!

Szechwan Shrimp

This was so stinkin easy and tasty I cant believe it! Next time I will use raw and larger shrimp so it gets more flavor, but for speed, cooked is awesome. did with the tomato salad and rice in less than 30m with the only prep being the thawing of the shrimp. I also threw in some peanuts and match stick carrots to go further.

Pumpkin Pancakes

What a nice seasonal treat! With Maple Syrup... yummy! RE the "soft in the middle" comments. Just cook at a low temp(2.5 or 3 on an electric) vs.. a hot griddle. They need longer to cook than a traditional pancake... probably due to the pumpkin. Don't be afraid of the vinegar... you can't taste it at all and makes them fluffy (ever mixed soda and vinegar?). Next time I think I would put the sugar in with the milk mix. b/c it's clumpy and hard to blend in without over beating. Kids never suspected there was something healthy hidden inside! I said they were "fall" pancakes!

Chocolate Chip Oatmeal Cake

I was hopping on here to add this recipe but darn if it isn't already here! It's EXACTLY like my moms's recipe which she gave to me 18 yrs. ago as a wedding shower gift ... I've been consuming it for MUCH LONGER. This is my go to "someone did something nice for me" cake as my kids say....great for potlucks! Some people have even called it brownies! (but's it's totally a 'cake'!) I have just a few comments. Use a 9x13 pan. Never tried in a jelly roll pan but have split the batter into two 8x8. This is the most forgiving recipe ever. I was out of brown sugar last time and used molasses and exta white sugar! Another tip... add the butter right after the 10 minutes and cover the bowl with the oatmeal and butter to make it melt faster. It aslo helps if you leave it out of the fridge much in advance. Some say it's missing something... I see one main thing missing from Mom's recipe. Using a 12oz bag of chips, half goes in the batter and the other half on the top! (That's about a 1 cup each) The walnunts make it, but with so many having algeriges, I omit when taking to an event. Don't try using anything other than "instant" oats. If you try the irish, or old fashioned they will give a crunchy or "nuttty" texture so make sure to use the "QUICK" oats. Finally Mom write on her recipe card "will not freeze well... doesn't last long!" If you find this recipe dense or not moist, you did something wrong... enjoy! (Hey, it has oatmeal... so it's vitrually healthy!!)
