WOW!!! This is incredibly easy and delicious. I followed the instructions, I just executed them a little different. How I did it was in the top of a double boiler I combined the sugar, flour, cornstarch, salt, water, lemon juice and zest, and the egg yolks. I whisked all of this together constantly over medium high heat. I timed it, and seven minutes later it was very creamy and thick. No need for tempering the egg yolks. I took it off the heat and stirred in the butter. Next time I won't be using the butter because I couldn't see a difference in the taste. Oh, and my double boiler was nothing fancy. I used a large stainless steel mixing bowl and set it over a pot of simmering water. I poured this mixture into a graham cracker crust, and since I don't care for meringue, when it had cooled in the refrigerator, I topped it with cool-whip. I will be making this very often for sure.
