The Best Vegetarian Chili in the World

OH MY GOSH. I'm usually not a fan of veggie chili, but this was really easy and REALLY tasty. It tastes like it has meat in it. Very flavorful and makes a lot more than 8 servings! We made this for a soup style kitchen..got rave reviews. Served it with some cornbread (with added creamed corn to the mix). Delish! Thanks for sharing :)

Curried Chicken and Brown Rice Casserole

I really enjoy the simplicity of this dish. Good flavors, really easy to make. I use brown rice. Throw everything in a 13 x 9 and also add some coconut milk. Bake it covered in the oven for about 1.5 hours. Great as left overs! I make this at least every 2 weeks.

Turkey and Quinoa Meatloaf

Oh.My.Gosh. This was delicious! If anything at all I would change, it would be double the brown sugar glaze for the top. It was lick your fingers good. Awesome with some roasted veggies, and mashed potatoes.

Apple Cole Slaw

Made this with a group of friends, it was fun! Slaw is really refreshing and tasty! Only change I'd make is lessening the cabbage. We only used 1 head and it was plenty (We scaled it up to serve 20) Super easy and really good! Goes great with sloppy joes..

Braised Balsamic Chicken

I thought this recipe was delicious. Served it with asparagus and brown rice (added some mushrooms with the onion). My pan wasn't big enough so I sauteed the onions and mushrooms, took them out, then browned the chicken. Added onions and mushrooms back to the chicken then the rest of the ingredients. Really good! Try it :)

Kalua Pig in a Slow Cooker

Made this how the recipe calls. It was okay. I added more seasoning than called for, and it still tasted bland to me. I tried making it one more time, this time adding a half bottle of Soyaki. It was so good!

Bacon-Wrapped Asparagus

2 of my favorite things. Double yay :) Used about 3 asparagus per half bacon slice. Bacon kind of unraveled when I ate it. Next time, I think I'll just chop up some bacon and saute them together. It tasted good, but just not worth the trouble.

My Best Clam Chowder

Really good. Pan fried bacon and used the fat to saute the onion, celery, carrot. Added crumbled bacon with cream. Delicious!

Pork Loin Chops in Apple Cream

I really enjoyed the sauce on the dish, the pork however, not so much. I don't understand the point of breading the pork then simmering it in sauce. It just makes it soggy. I will use the idea for chicken breast minus the breading next time. Really good served with fresh steamed green beans and baked yams.
