Garlic Prime Rib

I prepared this recipe today, December 26, 2013 (it was suppose to be Christmas Dinner, but we were still full from our family brunch) and it was amazingly good! Although my roast prime rib was only 5 lbs. I still prepared the marinade as written, but inserted slivers of garlic throughout the meat, wrapped it, and let it sit overnight in the frig. Prior to cooking I let the meat come to room temp and cooked it at 450 for 20min and then 325 for 3 hours - I don't care for rare meat so I cooked it longer than the recommended time. The Prime Rib was tender, flavorful, and moist! My daughter says it was almost as good as my sister's roast but I say it was 10xs better - lol! I served it with garlic mashed potatoes, glazed carrots, and rolls. Thanks for sharing!

French Toast I

I woke up this morning wanting French Toast for breakfast. Not quite sure how to make it I looked up this basic recipe and found it to be very good. However, I used heavy cream instead of milk or half & half. I will definitely use this recipe again, but perhaps add a bit more cinnamon & nutmeg to boost the flavor a little. Thanks for sharing!

Creole Chitterlings (Chitlins)

OMG! These were the best chitlins ever! This was my first time attempting them for our traditional New Years dinner. Since I come from a long line of excellant soul food cooks and want to pass along the tradition to my daughter, I wanted to put my best foot forward. I only cooked 10lbs. of chitlins, which is 1/2 of the recipe, but did not use bell pepper or bay leaf, but the chitlin turned out great. However, I cooked them for 7-8 hours -- I like them very tender -- and did not eat them until the next day, which I think played a big part in developing the flavor. This recipe is simple and will be added to my recipe collection for the upcoming New Years I am blessed to see!

Shrimp Scampi Bake

I prepared this meal last night and it was good. I did, however, take suggestions to reduce the butter by half and add Old Bay and Parmesan cheese. I baked the shrimp in the oven for 12-15 minutes (on the lower rack) and they came out perfect. And, I must say the leftovers tasted even better today! Thank you for this recipe -- it's a keeper.

Baked Salmon II

My 11 year old daughter has been bugging me to cook salmon for dinner for some time. I thought I would surprise her and try this recipe today. I am so glad I did! The salmon was light, but flavorful and went well with a garden salad w/balsamic dressing, and green beans. Plus, I am trying to eat healthier and this recipe proves that you can enjoy a meal without all the fat and oil. This is now one of my "go to" recipes. Thanks for submitting!

Sweet Smoked Pork Ribs

This was my first time at a true attempt to cook ribs in the oven -- I am not very good with the grill! I must say that the ribs were flavorful and tender. I was impressed, especially since I am not a big rib eater anyway. I will definitely keep this recipe on deck for any upcoming cookout!

Marinated Baked Pork Chops

This recipe was "okay." The glaze was nice, but I also recommend doubling the sauce. I served the chops with steamed vegies and rice which made a nice meal.

World's Best Lasagna

I cooked this meal a couple of days ago and it was very good. I followed the recipe as written and found that I just enough of the great tasting sauce for three layers and three rows of lasagna. However, I did not have any fennel, but I don't that it made much difference. I did, however, think it was a little too much salt for my taste and will use less next time I make this dish. Thanks for posting!

Ambrosia Fruit Salad

Super easy and not just for the holidays! I made this to take to a potluck after church in "June" and it was a big hit -- there was only 1/2 c. leftover. Next time I may omit the coconut because I find that a lot of people do not care for it. Thanks for posting.

Blackened Chicken

I tried this recipe for my first attempt at cooking blackened chicken. The chicken turned out good and I enjoyed it cubed over a salad. I do agree that it's not necessary to transfer the chicken from the pan to a baking sheet; I too put the pan directly in the oven! However, I will play around with the seasonings next time to create a bolder flavor. All in all, this was definitely a good beginning recipe.

Fish Tacos

I tried this recipe and enjoyed it. Even my mother, who has never eaten a fish taco and thought it was an odd combination, liked them, too! And, the sauce was fabulous -- even better the next day. I also used this batter for shrimp as well and it was a big hit
