Pumpkin Bread IV

This is an awesome recipe. I made it almost just as written, but I used a full 28 ounce can of pumpkin, slightly less sugar (1/2 cup less or so) and I used 4.5 tsp. of pumpkin pie spice in place of the individual cinnamon, nutmeg, and cloves. I made this into 3 dozen muffins: plain for the first two batches, then added chocolate chips for the last batch. I sprinkled cinnamon sugar on top and baked each batch for 22-24 minutes as other reviewers suggested. Deeeeeeelicious!

Banana Pancakes I

These were fantastic with a few changes and some careful cooking. I only used 1/2 cup milk, and replaced half the flour with whole wheat flour (to be healthier, but to be honest I ran out of regular flour). I added 1 tsp vanilla extract as a few other reviewers did. I also made sure to cook them more "low and slow" than I usually do with pancakes. I had to throw out a few when the pan got too hot...the outside got burnt and the inside mushy when it was too hot, just as some other reviewers found. But low and slow worked great! I added some chocolate chips and my kids loved them just plain... I loved them with almond butter and a small drizzle of pure maple syrup. Yum!

Easy Pesto

I make this often with a few changes. I use walnuts instead of almonds (just what I usually have on hand) and skip the toasting step. I'm a working mom for goodness sake! :) I usually throw in some parmesan cheese as well. I freeze this in ice cube trays for future use. My favorite is a pesto chicken salad....shredded leftover chicken, chickpeas, celery, tomatoes, broccoli slaw, and a few cubes of pesto. Great healthy lunch to bring to work. Yum!

Banana Muffins II

This is a great recipe! I added a teaspoon of vanilla with the wet ingredients, as well as 1/2 cup chocolate chips. My kids devour them!

Frank's Favorite Slow-Cooker Thai Chicken

This is one of my favorite recipes from this site! I use chicken breasts and put them in frozen in the morning since I go to work at 7am. The chicken falls apart and is shredded in the delicious sauce when I get home and stir it! Like other reviewers, I use a full can of coconut milk. Last night I tried stirring a bunch of baby spinach leaves about 10 minutes before serving over a brown rice/quinoa mix. Delicious!!!

Ground Beef 'Wellington' with Fennel

My husband loved this! I didn't have fennel and so sauteed chopped celery along with the onion. I'm not sure if I misjudged the amount of beef I was using, but the crescent rolls weren't big enough to hold all of the meat mixture. But no problem - I made a few "meatballs" for my 3-year-old to dip in ketchup by putting the extra meat in a muffin pan to cook along with the beef wellington (and he ate it!). A hit all around.

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

This was awesome and a great way to use up zucchini in the summer. My husband doesn't usually like zucchini and he loved it! I only sauteed the zucchini about 2 minutes per side, and I used havarti cheese instead of mozzarella since that's all I had. It was delicious - potluck or even holiday-worthy!

Healing Cabbage Soup

I've made this soup twice now (different ways!), both times to use up cabbage and other vegetables that came in my produce box. The first time I used red cabbage and diced tomatoes with some spinach added at the end, the second time I used green cabbage and a jar of pasta sauce since I had no tomatoes on hand. Both times I threw in carrots and summer squash since I had lots of them! Both versions were super delicious! I ate a few bowls and froze the rest to use in the winter - not a big craving for hot soup in August!
