Cheddar Baked Chicken...absolutely to DIE for!!!

Sunday my husband was having a cousin come into town, so I had to find a nice and easy recipe that would taste good. Personally I don't like fried chicken, so I had to look a little while before I was able to find this recipe. When I finally found Cheddar Baked Chicken, the simplicity of the recipe as well as the fact "cheddar" (we love cheese in this household) and "baked" were both in the title, I figured it should work out ok. In the end we decided to go out instead of eat in, so I had to wait to make the chicken!!!

The next day I was determined to make the chicken. The recipe called for Cheddar cheese, but I only had Mexican Blend cheese on hand, so I had to use that, but it gave me an inspirational idea. Why not add in some "Mexican" spices to tweak it a bit? So in the four mixture, I added some Cumin and a shake or two of Cayenne Pepper. I have always been afraid of Cayenne Pepper because of its spiciness, but I have learned thru my cooking that it can add a bit of a kick, so I have become braver when using it :)

The recipe also called for crispy cereal which I didn't have, so I omitted that. I had read a couple reviews where people had said they left it out, and it didn't cause any major complications. The crispy cereal was supposed to be mixed in with Italian bread crumbs. I had those, but I also had roasted garlic bread crumbs, and my husband LOVES garlic, so I used those instead because I didn't want to mess up the Mexican vibe. 

I followed the time and temperature that was in the recipe, and when I took the chicken out of the smelled soooo good!!! I dished it up with some yellow rice and couldn't wait to try it. The chicken was to die for!!! It was very moist and the flavor was awesome.

Now normally when I make chicken breasts, I will make 4 since it is just my husband and I. If the chicken is good, we will end up having a breast and a half each, and then he will have one left over for his lunch the next day. Well since I didn't bake the chicken on Sunday, I had 5 chicken breasts thawed instead of the normal 4. But I made all 5 and I'm sure glad I did! Both of us ate TWO breasts!!! It was that good! I was very glad I had gone ahead and made the extra breast so he was able to take it to work the next day. This recipe has DEFINITELY been added to my repertoire. I can't wait to make it again!!!!
