I am 27, happily married, and stay-at-home mom to a beautiful little girl, Ruby. My husband recently finished his PhD in Chemistry and is doing a post-doc here in Denmark, so we are along for the ride!
My favorite things to cook
I love to try new things and try to have several new dishes every week. Being a young mother, I do enjoy cooking things that are healthy, yet quick and easy to prepare.
My favorite family cooking traditions
Ris a l'amande! This is a traditional Danish dessert served during the Christmas holiday. A deliciously creamy rice pudding topped with cherries and one whole almond hidden in the pot. Whoever gets the almond, without cracking into it, recieves a marzipan pig and all the luck that goes along with it for the next year.
My cooking triumphs
Every night when my husband oohs and ahhs over dinner and my daughter gobbles up whatever I've prepared! I feel like a cooking champion!
My cooking tragedies
The absolute worst thing I have ever made was Lions Head Meatballs for the Chinese New Year (Cooking Light magazine). They were absolutely soupy with sesame oil. I still don't know what went wrong... but they were not edible. Since moving to Denmark I've had lots of baking tragedies in the cake department... I think I'll blame the oven!

As other reviewers said... cut way back on the ginger. I used 1 1/2 tsp. and I think I'll cut back even more next time. All in all, it's a tasty dessert, especially dusted with coffee!

American Shepherd's Pie

Lemon Poppy Seed Bread
Make sure that you use real lemon extract! I didn't have any, so I tried to just use lemon juice--the flavor didn't come through at all.
