Janet's Rich Banana Bread

Reviewed: Jan. 18, 2014
Possibly the best banana bread I've ever made! Used macadamia nuts instead of walnuts. Added a third banana for more banana flavor and reduced sour cream to 1/3 cup. Ended up baking an extra 10 min. This is now my go to recipe for banana bread. Thanks!

Quick and Easy Mexican Chicken

Reviewed: Aug. 8, 2012
Grub! I added a little garlic powder, an extra clove or two of real garlic, and a little seasoning salt. A few slices of jalapeno too since we like some extra kick around here. Delish! Thanks!

Best Carolina BBQ Meat Sauce

Reviewed: May 28, 2012
Yum! I'll admit...born and raised in Washington and never had a mustard based BBQ sauce until I went to a chain BBQ place that just opened up that had a version of this in their BBQ sauce choices. I was hooked then and decided to find a recipe for one that I can make my own of what one dish cost there. This sauce was a hit for the whole family and I keep a bottle in the refridgerator now for reserve. Thanks, Tripper, for sharing this recipe!

Breaded Dijon Pork Chops

Reviewed: May 15, 2012
Loved these! Use a thinner chop to prevent crumbs from burning. I ended up baking them to finish the cooking without burning the bread crumbs. Mustard adds the perfect amount of tangyness.

Maria's Stuffed Chicken Breasts

Reviewed: May 15, 2012
The whole family really enjoyed this! I beat the chicken under some saran wrap to even it out and spread a nice layer of the filling on top and rolled it. I made the filling as suggested minus one egg and minced three cloves of garlic. I melted some butter with the remaining garlic and brushed that over one side. After rolling and toothpicking it to hold it together, I patted a little bit of panko crumbs around it and seasoned with a little salt, pepper and garlic powder. Didnt use the spaghetti sauce but otherwise baked as directed. I didnt fry the panko and I probably should have but just when the chicken was about done, I broiled it just enough to crisp up the crumbs, added a little mozzerella and baked another minute or so. Manicotti meets chicken...totally delicious! I am thinking next time I might try it with a spinich dip like filling with the ricotta and see if that might work?

Crispy Fried Chicken

Reviewed: Feb. 21, 2012
Yum!! I finally made good fried chicken - thanks to this recipe! I used my electric fryer and filled that almost half way with veg oil and heated to 350. I used only drumsticks and I added seasoning salt and ground pepper to the drumsticks right before they hit the fryer. Totally juicy, crispy, and delicious!! Definitely adding to the recipe box!

Absolutely the Best Chocolate Chip Cookies

Reviewed: Sep. 17, 2011
Excellent cookies! I use what I have and make the necessary adjustments like 3/4 cup butter and 1/2 cup of shortening instead of the butter shortening, vanilla or imitation works, and semi sweet chips. I'm sure if I had the ingredients in this recipe these cookies would be even better! Either way, my family loves them and they dont last long at my house either! Thanks Nicole!

Mom's Zucchini Bread

Reviewed: Aug. 27, 2011
I like to double the amount of zucchini and sometimes I like to add a 1/2 cup or more of flake coconut. It takes longer to bake due to the extra zucchini but the moistness is still there and the flavor is sensational!

Chili Macaroni Casserole

Reviewed: Aug. 14, 2011
My daughter was concerned when I told her the other night we were trying something new and not to worry because its kid approved. She told me I have said that before but this time she was not dissapointed and I heard no whining! This recipe is awesome! My entire family loves it! I tend to add a little extra cheese in the cheese mixture and the diced tomatoes with green chiles mixed in but other than that this recipe is very good as is!

Pigs in a Blanket

I do these with cheddar lil smokies and crescent rolls. I cut the crescent roll dough triangles to make three more triangles and wrap each smokie up. Good dipped in ketchup!

Chicken and Cheese Crescents

Reviewed: Mar. 18, 2011
I make this often and my family loves it. I only use one can of soup, one can of milk, and I dont roll the crescents as the bottom seem to get soggy. I typically use chicken breasts, season with some garlic powder, salt, pepper, whatever I feel like - nothing fancy. Add a little water and cover and cook over medium heat until cooked. Shred with forks. Mix chicken with soup, milk, and cheese until blended and add to baking dish. Layer the crescent roll dough on top and sprinkle cheese on top and bake until crescent rolls are browned.
