Tiramisu Layer Cake

To die for! I didn't read all of the directions before hand and didn't notice you had to mix the marscapone with the frosting so I had to disassemble my cake (very difficult) and only was able to spread the frosting over the filling on one layer. It was still awesome. I followed other reviewers and did two layers of coffee and upped the amount of instant coffee to 4 instead of 1. I also doubled the amount of liquor and coffee for the drizzle. This is definitely a show stopper. Thanks for the recipe.

Corned Beef and Cabbage I

Guinness® Corned Beef

This corned beef had awesome flavor. I made the traditional corned beef and this one and people raved over the guinness flavor. My only complaint was that it was a tad on the salty side so next time I make it, i think I'll boil it a bit first to get some of the salt out. Other than that it was delicious. This will be my new go to recipe for corned beef.

Irish Cream Chocolate Cheesecake

Super easy and yummy. I, like others, added 1/2 cup of Bailey's. I used oreos for the crust and then followed everything else to the letter. I found that my cheesecake cracked big time too. But it's not really that big a deal to me. Thanks for the recipe. Everyone loved it.

Artichoke Chicken

Avocado Soup with Chicken and Lime

Really good. I loved the avocado in it and thought it could use another one. I also had to use canned tomatoes because I ran out of fresh ones. I will definitely make this again.

Christmas Morning Frittata

Terrific frittata. I didn't have any peppers so I just used sweet vidalia onions, garlic and tomatoes. I also added a little feta and used a sharp cheese mix. I definitely suggest spraying the pie plate with non stick spray. Thanks for the great recipe.

Cod with Italian Crumb Topping

THe best cod I've ever eaten. The only reason why I'm giving it a four star is because I took the suggestion of lemon and mayo instead of egg whites and I think it made a big difference in taste. I sauteed 3 cloves of garlic in oil then added it to a little mayo and lemon juice until it was thin. I then brushed that on the fish instead of the egg whites. It was awesome and super flavorful.

Roasted Cajun Potatoes

These potatoes are awesome. I had to change a few things due to lack of ingredients on hand. I firstly used yukon gold potatoes and kept the skins on. They worked very well. I also didn't have any parsley so I just omitted it. I also didn't have any shallots so I used onion flakes. Other than that I followed the recipe to the letter. The outcome was deliciously crispy potatoes and a tender middle with great cajun spice.

Mom's Sushi Rice

Delicious! I didn't have the kelp so I omitted it. I served it warm as a side dish with sesame seared tuna. This will definitely be my new side dish for asian meals.

Sesame Seared Tuna

Wow! This is awesome. Restaurant quality meal that is so easy to prepare. The only thing I changed was the mirin. I didn't have any so I added a little bit of sweet white wine that I had. I served it with sushi rice and a wasabi/ginger mayo. This is a definite keeper and is sure to be a dinner party meal.

Easy Key Lime Pie I

I'm giving this a four star only because of the changes. I did what others did and added an additional can of condensed milk and only 4 egg yolks. I also couldn't find any key lime juice so I did the half lemon juice/half lime juice thing. I also used bottled juices because it was all I had on hand. The outcome: a deliciously sweet/tart/creamy pie that was gone in no time. I can't wait to try it with fresh lime and lemon juice.

Jalapeno Popper Spread

A very tasty dip. I followed the recipe to the letter. Not too spicy, not too mild and super easy to make. I used fire roasted chiles and they were delicious. I served the dip with tortilla chips and fritos.

Corn Dip II

I made this for a party and people seemed to enjoy it. It wasn't my favorite dip as it was a little rich for my taste. The recipe makes a ton and is good with carrot sticks, fritos or tortilla chips.

Russian Mushroom and Potato Soup

Good soup that can be altered to your tastes. Can be made a little healthier with milk or ff half and half. It was just a little bland to me. It was a very hearty soup though and very filling. Maybe it will be better today.

Tiny Pecan Tarts

I've always wanted to make these after having them at a Christmas party years ago. I am so happy I found this recipe. It is exactly what I wanted. I followed the recipe to the letter and the outcome was a delicious pecan pie like tart with a gooey center and crunchy top. This has made our annual Christmas cookie rotation.

Raspberry and Apricot Rugelach

These are super delicious and very pretty cookies. They are a little time consuming but worth it. I made the variation with brown sugar and apricot spread. I added the brown sugar to the sugar nut mixture and sprinkled it over the apricot spread that I brushed on the dough. I used no sugar added preserves because that was all I had on hand. At first they were oozing a bit and I thought they would be too soggy but after a little more time in the oven, they were perfect. These are a keeper.

Easy OREO Truffles

These truffles are tasty and pretty easy to make as truffles go. My mom accidentally used my bakers chocolate so I had to use chocolate chips and it worked out fine. You also don't need to crush 9 cookies to sprinkle the truffles. I think 5 would be fine. Thanks for the recipe.
