Absolute Mexican Cornbread

Absolutely delicious. I doubled the recipe and made one with jalepenos and one without. I followed the recipe to the letter. Will definitely be making this again.

Quick and Easy 20-Minute Chicken Posole

I found this soup to be a little bland even after adding cilantro and hot pepper. I think it would be much better with the traditional pork. I will try it again with pork next time.

Broiled Tilapia Parmesan

Yum-ee. This is the best fish I've made in a while. I added a little more lemon juice, a dash of cayenne pepper and a bit of white wine. The fish is very delicate and doesn't need to be cooked long which is awesome when you have a hungry family waiting. Thanks so much for the recipe.

Crab Quiche I

This was good, but not the best quiche I've had. It may have been my fault. I thought that the quiche was a little too delicate and needed more eggs. I'll try this again with more eggs next time.

Bread Pudding II

Awesome recipe. I hate raisins so i used choc. chips instead. I also used italian bread and a few slices of wheat for some color. It is now one of our favorite desserts.

Maple Dill Carrots

These were really tasty not really mapley though. I didn't have fresh dill so I used dried. I will try fresh next time. The water I boiled the carrots in also didn't evaporate so I just drained them when they were al dente. I will be making these again.

Shrimp and Feta Cheese Pasta

This was pretty good. Like other reviewers I thought this pasta was a little dry. To make it a little less fattening I only used 1 tblsp of oil and used 3 tblsp of chicken broth and 1/4 cup of pasta water. I also added a little crushed red pepper and wheat pasta. I think I will use less pasta next time.

Bananas Foster II

OMG!!! This is the best thing I think I've ever eaten. It was so gooey and delicious. I didn't have rum so I omitted it. I also forgot the cinnamon but it wasn't missed. Super good even without ice cream. Great recipe to use up those browning bananas.

Salmon Chowder

This was great. Very similar to clam chowder. I added 2 bay leaves, thyme and fresh garlic and omitted the celery and dill. I also must have bought the wrong canned salmon because I had to debone it. What a pain. Next time I'll use fresh salmon instead.

Stuffed Shells I

These were delicious. I used fat free small curd cottage cheese. (it was all I had) I also used shredded monterey jack and shredded swiss instead of mozzarella. I will be making these again soon.

Alyson's Broccoli Salad

This is the best brococoli salad I have ever tasted. I don't like raisins or sunflower seeds to I substituted craisins and walnuts. A definite keeper!!!

Peanut Butter Bars I

WOW!!!!These are so yummy. I'm addicted to them. The crust will seem a little moist but it hardens very well. I also used a whole bag of choc. chips and lots more peanut butter in the choc. chip mixture. They are to die for!!!

Linguine and Clam Sauce

This is super yummy. I definitely didn't use as much oil or butter and added a little white wine. I also added some baby bella mushrooms. I will definitely be making this again really soon.

Hot Fudge Pudding Cake III

Sean's Falafel and Cucumber Sauce

Delicious. Use a food processor instead of a blender for the garlic, parsley and onions. I baked the falafel about 9-10 minutes on each side. I also added a little lemon juice to the yogurt sauce to make it thinner. I used lowfat yogurt and mayo to make it a little healthier. I used the falafels in a salad. I will definitely be making this again.

Chocolate Cavity Maker Cake

This cake is out of this world. It is so moist and yummy. I didn't have a whole container of sour cream so I used what I had left (about half of a container) and half of a container of ricotta cheese. (both fat free) I will definitely make it the same way again. Like other reviewers, I used the satiny glaze and topped it with walnuts. Yum!
