Swiss Chicken Casserole II

Reviewed: Dec. 12, 2006
Very tasty but a little salty. We used cream of mushroom soup instead and that may have been the reason why??? I used a whole can of cream of mushroom for 2 chicken breasts. It was the moistest chicken I have ever eaten.

This is better than other pudding cakes I've tried on this site. I will be making it again when I have a craving for chocolate.

Cottage Cheese Chicken Enchiladas

Reviewed: Dec. 7, 2006
These were really good. My husband loved them and thought they were better than a restaurant. I need to find a better tasting enchilada sauce though.

Cola Pot Roast I

Reviewed: Nov. 4, 2006
Very good pot roast. I, like others, added fresh garlic and put it in the crockpot on low for about 7-8 hours. I added carrots about an hour before serving. I couldn't find the spaghetti packet but found something roasted red pepper pesto in a packet and used that. It was very tasty.

Balsamic-Glazed Salmon Fillets

Reviewed: Oct. 17, 2006
This was really yummy. I added chopped onions to the balsamic mixture. I let it reduce a little longer than three minutes as well. It's also very pertinent that you use foil on your cookie sheet!!!! Thanks for the recipe.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Oct. 5, 2006
This was a super easy soup to make. I love how you can just put everything into the crock pot and go. I made a few adjustments: added creamed corn instead of frozen, added black beans, and topped it with cheese, sour cream, and green onions. I also boiled the chicken in cayenne, cumin, and coriander. I used the water the chicken was boiled in, in place of the two cups of water. Make sure to really toast the tortillas or else they are too chewy. I will definitely be making this again, thanks.

Shepherd's Pie VI

Reviewed: Oct. 3, 2006
I am not a really big fan of shepherds pie but this was just awesome. I made a few adjustments: I added a little sour cream to the mashed potatoes, garlic and crumbled sausage to the hamburger mixture, nixed the carrots and used canned corn instead. Delicious!!!

Very good salmon recipe. I think it needed a little more kick though. I will try what others suggested and add a little red pepper. I will definitely make this again.

Spicy Garlic and Pepper Shrimp

Reviewed: Sep. 27, 2006
This would have been better if there wasn't so much cilantro. I doubled the recipe for my husband and I and thought the cilantro taste was way too over powering. I will make this again without cilantro or with a lot less.

Chiles Rellenos Pie

This was pretty good. I didn't add chicken, because I didn't have any defrosted. I will try it again with the chicken.

Very tasty burgers. I only used 93% lean beef. I also cooked the burgers then broiled them with feta. I topped them with cucumber sauce and tomatoes. Yum

Andrea's Pasta Fagioli

Reviewed: Aug. 29, 2006
This was delicious and super easy. I made a few adjustments to what I had in the pantry. I used a can red kidney and a can of black beans instead the cannolini and navy beans. I also used two 8oz can of tomato sauce and one 14 oz can of diced tomatoes with herb. I also used half the pasta and added a little more dried herbs. An extra onion is a definite must for those who love onions. I will definitely make this again.
