Thai Pineapple Chicken Curry

Wow. This is awesome. My husband was actually tilting back his plate to his mouth to drink the sauce. Disgusting, but a sure sign that he loved it. I only used 1 can of coconut milk, added a little reg. milk and some pineapple juice from the pineapples. I also only used 1 tbs of chile paste, 1/8 c sugar, added carrots, and garlic. This will definitely be made again in the very near future.

Black Beans and Rice

This was yummy. I didn't have black beans so I used black eyed peas instead. I also added a bit of cumin and coriander while it was cooking. I also didn't want to open a can of tomato sauce for 1 tbs so I used a tbs of salsa. I will be making this again.

Impossible Pumpkin Pie

Very good for a pumpkin fix. More of a crustless pie than anything. I used half the can of milk and lowfat margarine because I didn't have any butter. My very picky daughter loved it so I will definitely make this again.

Restaurant-Style Buffalo Chicken Wings

I made these for my daughters birthday party this weekend. 10 lbs went in under an hour. I didn't even get to try one. My husband and family said they were even better than any restaurant. I ran out of flour so I used just enough to coat them lightly. I followed the rest of the recipe to the letter. I served these up with blue cheese. My mom has now requested these for our Christmas buffet. Thanks so much for the recipe.

Chicken and Biscuit Casserole

This was a very good meal for a cold night. Very comforting. I didn't use celery but added a little pultry seasoning to the veggie mixture. I also used regular carrots and leeks chopped well. This was even tastier the second day.

Best Chocolate Chip Cookies

These aren't my favorite cchoc. chip cookies but they are good. A think they could be a little sweeter. They are definitely crisp on the outside and soft on the inside. They taste even better afer a couple of seconds in the microwave.

Award Winning Peaches and Cream Pie

I got mixed reviews on this one. As I don't like peaches I went by what others told me. Some were not too keen on all of the different flavors going on in this pie, ie the cheesecake flavor, cinnamon sugar and peach all together. Some thought it was lacking peach taste. I think I might just stick to a real peach pie, something they're used to.

Old Fashioned Coconut Cream Pie

I made this for Easter and it was a huge hit. I used real whipped cream for the topping instead of whipped topping. This is a definite keeper.

Spinach Stuffed Chicken Breast

This is honsestly one of the best chicken recipes I've ever made. I'm not usually a big chicken or bacon fan but all of the ingredrients together are wonderful. The only change I made was that I only had 5 oz of spinach. It worked out fine though because I had little chicken breasts. Next time I'd love more of the filling though. Thanks for the recipe.

Garden Fresh Tomato Soup

I was craving tomato soup and found this to be a great starting point. I used canned whole tomatoes with basil instead of fresh tomatoes because the tomatoes at the store weren't looking too great. I also misread the directions and added 4 cloves or garlic instead of whole cloves. It was a good mistake in my opinion. I ended up taking two out before I food processed it so it wouldn't be too strong. I also added a dash of ground cloves, oregano, and basil. After food processing it I added 3/4 cup of half and half. It was delicious and will definitely be a staple in our house.

Pork Chops with Raspberry Sauce

My husband loved these. Like others I didn't have sage so I used rosemary. I rubbed the chops and then left them in the fridge for a few hours. I also added a splash of white wine and balsamic vinegar to the raspberry sauce. I substituted 2 tbsp of chicken stock for the oj because I didn't have any. I used bone in pork chops so it took a little longer to cook. I actually ended up pan searing each side for about 5 minutes then broiling them. My husband said they were so good that they didn't even need the sauce.

Italian Style Meatloaf I

Omgosh this is delicious. I used whole peeled tomatoes instead of diced because that's what I had on hand. I used 93 % ground beef and it was still so moist. I also added a bit of parmesan cheese. I had to cook it a bit longer too. It was the best meatloaf I've had in a while. My extremely picky daughter even ate it all up. Thanks so much for the great recipe.

Yumm-ee. I kind of made this my own recipe because of my pickiness. I used all ground sirloin, no zucchini or olives, and added extra feta. I also had some egg whites in the fridge that I brushed on the gyrolls to help the garlic powder really stick. I also used the cucumber sauce from Sean's falafel salad with the gyrolls. This is a definite keeper.

Artichoke Spinach Lasagna

This was a good lasagna recipe. I used ricotta instead of feta, used unbaked noodles, have a can of chicken broth, and half a jar of artichoke hearts. I will be making this again maybe with the feta next time.

Chocolate Cakes with Liquid Centers

This was delicious. I like others used semisweet chocolate chips and a little less than 1/2 c of butter because that's what I had on hand. I buttered and cocoa/sugared the ramikins. I used 2 7 oz ones and it worked out fine. I cooked them for about 13 minutes for great lava and topped it with warmed rapsberry preserves and vanilla ice cream. I will be making these again soon.

Pizza Pinwheels

These were yummy. I used the super big crescents and rolled them out. I brushed them with butter and sprinkled one side of them with parm cheese, parsley, basil, and oregano before rolling them. I also made some with ricotta, crushed garlic, cheddar and mozzarella cheese for the non meat eaters. The key to easily preparing these is to make sure you roll them tight and keep them cold. I'll be making these again soon.
