Roasted Beets 'n' Sweets

Very good. I never thought I would like beets, but they are really great. I used brown sugar in place of the regular and really like that flavor it puts into the dish. I also just used one beet and one sweet potato. The cooking time can be cut if you make the sizes of the chunks smaller. I don't care for onion, so I did not use.

Quinoa and Black Beans

Very good. My daughter thought it looked strange, but it tasted great. I added rotel tomatoes and used chicken broth plus only 1 can beans and 1 cup cooked ground chicken. Served with shredded sharp cheddar and sour cream at the table. I have a nice rice cooker that I sauted and cooked it in, so it was very quick and easy.

No-Noodle Zucchini Lasagna

This was really good. My husband never thought he would like a vegetable lasagna and he ate plenty and loves it leftover. This was the second time I had made it and I really liked it better. I put about 1 cup of rice in the bottom which really made it less watery than the first time. I also used Prego sauce and cottage cheese and fresh spinach and pre cooked ground chicken because that is what I had on hand and it made prep much easier. I prefer more mozzarella and less parmesan, so just used a little parmesan on top. I have a spiral vegetable slicer, so my 2 zucchini and 1 squash were very thinly spiral sliced and cooked up beautifully. I used a deep pan because when you are initially layering, it is pretty tall, but it does cook down nicely. Will make this regularly instead of pasta since I am now gluten free.

Toscana Soup

Very good with some of the modifications suggested by previous reviewers. Used more potatoes and steamed the kale. Used all chicken broth and added some cornstarch to thicken. I only had turkey sausage patties from Jimmy Dean and they worked well after chopping them up. Also added some red pepper flakes. Will definitely make this again.

Libby's® Pumpkin Cranberry Bread

Very good and moist and the whole cranberries were great. I did what some of the other reviewers did and used 1/2 oil, 1/2 applesauce. I also doubled the cranberries and left them whole. It took 5-10 minutes longer to cook, so I would recommend putting foil on top the last 15 minutes to keep from getting too brown. I also made up the spice mix using 4 tsp. cinnamon, 1 tsp. nutmeg, 1 tsp. ginger, 1/2 tsp. cloves, all ground. This will give you enough to use in this recipe with a little left over. I used parchment paper in the bottom to help it come out easier. I gave some to a friend and her husband ate it all up before she could even taste it!
