Garlic Seasoned Baked Pork Chops

My husband and I both loved this. Can't be beat for simplicity and deliciousness combined. I didn't change anything, and won't when I make it again, and that's unusual for me not to tweak a recipe at least a little!

Freeda's Fabulous Fish

I used Lawry's Signature Steakhouse Marinade, half the butter, and just over half the cayenne (ground, not flakes). This was really wonderful! Would have been too spicy as written, for us, and my husband loves spicy food. Used fresh garden tomatoes, just sprinking salt and pepper over them (not the suggested amounts, just to taste), and they are a great addition to the meal. My husband says it would be a great dish to make for company. First time he's ever said that!

Unbelievable Chicken

We loved this! I've never used a marinade that really made such a difference to the flavor of the meat throughout. Used regular mustard, 1/2 cup lime juice, 1/4 cup lemon juice, 1/2 cup (3 T = 1/4 cup) olive oil. I'm going to bake this when grilling season is over, and going to try on a roasted whole fryer, as well!

Orange, Honey and Soy Chicken

I made this pretty much as is, using 1/2 cup orange juice, 1 tsp ground ginger and 1 T. minced garlic (instead of pastes). I served it over parboiled white rice. I was concerned about the sweet-and-sour-sounding combination of ingreds, because my husband hates too much sweet-and-sour, but he raved over this and declared it a do-over. I served peas and carrots on the side, but next time might try adding in snow peas or frozen broccoli in the last few minutes of cooking. A definite keeper!

Mallorca-Style Vegetable Bake

I made this pretty much as said except I had no eggplant. I added a bit of garlic salt and parmesan. I'm so glad to have found a new recipe that is healthy and flavorful!

Waldorf Brown Rice Salad

I was looking for a healthy way to use leftover brown rice, and this was perfect. The only change I made was to use sour cream instead of yogurt, because it's what I had, and I doubled the rice, which was a good change. Very healthy and good. I'm going to work on substituting the mayo for something healthier, but I'm quite satisfied. I may make it for company for the 4th of July!

Whole Grain Banana Pancakes

These were wonderful. I used organic unbleached flour because it's what I had, but plan to use wheat germ next time to replace the almond meal.I doubled the oats, halved the salt, used milk soured with lemon juice. I let the batter rest 15 minutes as suggested. My husband and I both loved them.

Zucchini and Potato Bake

My husband is very sceptical of any dish containing zucchini, and he absolutely loved this. The only change I made was to cut all the veggies into bite-size pieces (I sliced the potatoes, not very thin) and I was able to cook it to perfection in 45 minutes. The red pepper was a wonderful addition!

Sweet Italian Green Beans

I served this for Christmas dinner, and it was a hit. I decreased the brown sugar slightly, and increased the bacon slightly. I made it as directed then transferred it to a crockpot, and it was wonderful.

Baked Salmon Fillets Dijon

This was AMAZING. I didn't have dijon so I mixed 2 T. honey mustard with 1 T. plain mustard. I had to bake the fish several minutes longer than it called for, maybe because my filets were so thick. We will make this often, because it's so quick and simple.

Yummy Cube Steaks

I'm going to call this recipe Cubed Steak Cacciatore! I made it pretty much like the recipe called for, except adding minced garlic and Italian seasoning and throwing in some green pepper strips for 20 minutes at the end (I simmered the meat and sauce for one hr, then put in the green peppers for ten min, then added the chopped zucchini for a final 10 min.)I then served it over brown rice, but it would be wonderful over spaghetti noodles as well. As others have said, it's great to have a recipe that makes the rather lowly and unappealing cubed steak into a meal we look forward to and have definitely put on our Do-Over List!

Early-Riser Oven Omelet

I was looking for a quick breakfast that would use some frest veggies I had on hand, and this was perfect. I used 10 whole eggs and no whites, cut back the pepper, and added fresh mushrooms to half. This is definitely a keeper, because it was so convenient, fast to throw together, and a full meal when toast was added!

The Best Chicken Fried Steak

We absolutely loved this! I had given up ever making great chicken fried steak after trying some a local chain restaurant which is to die for. However, this recipe sounded so close to theirs that I tried it. I used milk w/ vinegar in lieu of buttermilk, and omitted the tobasco. I will probably use canola oil next time to cut down the greasiness, but it is absolutely a do-over!
