I'm a busy mom and business owner; I just finished 18 yrs of homeschooling, and have so much more time to cook! I take care of my 23yo daughter with special needs and have a photography business that I've been at for almost nine years. I look forward to more cooking and being able to get more active in church activities.
My favorite things to cook
I like hearty home-cooked meals, but am trying to be more and more conscious of choosing healthy foods, kicking simple carbs, adding more veggies, and cooking meats in better ways. I love carbs and a love chocolate! I don't struggle with weight, but my husband does, and I just want us all to eat in ways that are good for us.
My cooking triumphs
I recently had a graduation dinner for my daughter. Catering was SO expensive, so I opted to take a day and make a LOT of lasagna for 120 people. I saved about $7 a head over catering (for a comparable meal), and people were asking us who DID the catering!! That was nice...I was afraid of letting down a LARGE crowd.
My cooking tragedies
My worst tragedies have been using boxed, processed foods and being so busy and distracted that I made a stupid mistake! I guess when I actually have time to make a good meal I'm more alert and careful.

Southwestern Beef Skillet
I made this recipe tonight, and it was a big hit with my family. The only change I made was to replace the green beans with canned black beans. Then I served it with tortilla chips. It's definitely going on the do-over list. Fast, yummy, pretty healthy, inexpensive. As quick to make as a boxed dinner, without the scientific ingredient names. Can't beat that!

Garlic Seasoned Baked Pork Chops
My husband and I both loved this. Can't be beat for simplicity and deliciousness combined. I didn't change anything, and won't when I make it again, and that's unusual for me not to tweak a recipe at least a little!

Freeda's Fabulous Fish
I used Lawry's Signature Steakhouse Marinade, half the butter, and just over half the cayenne (ground, not flakes). This was really wonderful! Would have been too spicy as written, for us, and my husband loves spicy food. Used fresh garden tomatoes, just sprinking salt and pepper over them (not the suggested amounts, just to taste), and they are a great addition to the meal. My husband says it would be a great dish to make for company. First time he's ever said that!
